not much of any... onion has been proven good for overall health... it does however have quite a bit of sugar which is often brought out upon cooking the onions...

there is value in eating onion with foods high in fats
ex. Pizza with onion & peppers
ex. sausage pepper & onions
Put onion in soup, almost anything you cook - pot roast,
oven baked chicken
the onion (the pepper also) help in digesting the fats reducing the bad cholesterol
