~*~SOFT BOILED EGGS~*~

Bring eggs to room temperature before using. If the egg has been stored in the refrigerator it can be warmed gently under a flowing hot tap.

Place sufficient water to cover the eggs in a saucepan and bring to a gentle boil. Lower the eggs carefully into the water, using a tablespoon.

When the water reboils, start timing and reduce the heat so that the water simmers gently. Fast boiling makes the egg white tough and causes the egg to bang against each other and crack.

Timing boiled eggs depends on the size and degree of hardness desired. You should start timing the eggs from the moment the water first boils.

Soft-boiled (soft whites, soft yolks):

Large size: 3 minutes 20 seconds.

Medium size: 3 minutes.

Small size: 2 minutes 40 seconds.

Medium-boiled (hard whites, soft yolks):

Large size: 4 minutes 15 seconds.

Medium size: 3 minutes 50 seconds.

Small size: 3 minutes 20 seconds.

Hard-boiled (hard whites, hard yolks):

Large size: 10 minutes.

Medium size: 8 minutes.

Small size: 7 minutes.

Here's the best solution for hard boiled eggs....& it's the easiest way to boil perfect eggs EVERYTIME!!!

PERFECT HARDBOILED EGGS!
Perfect, because they practically peel themselves! This even works well with farm-fresh eggs.

Gently place eggs in pan of cold water. Bring water to a boil, cover with lid, remove pan from fire (leave lid on pan), & let set 20 minutes. Drain water, add very cold water (may add ice cubes), let set for 2 or 3 minutes, then drain. Replace lid. While holding lid securely in place, carefully shake the pan of eggs until eggshells are cracked into very small pieces, & eggs are either out of the shells or easily removed from them. Rinse eggs clean of all shell pieces. Use boiled eggs as desired.

Note: This is a good way to boil eggs to paint for Easter, minus the shaking of the pan, of course. An added benefit is that the eggs will NOT have that ugly green ring around the outside of the yolk, leaving it much more appetizing, tasteful, & less gaseous.

To boil perfect eggs simply place them gently into a saucepan and cover with cold water. Set the stove on high and bring the eggs to a boil. Boil for just two minutes. Remove the pot from the heat and let it sit for 12 minutes. In the meantime, fill a large bowl or pot with cold water and ice. When the 12 minutes is up gently lift each egg out of the hot water and set it in the ice water. This will stop the cooking process and help you avoid the green outer shell on the yolk.

Lay eggs on bottom of the pot

Try not to stack your eggs (it's better to do it in batches than overfill your pot)

Fill with water so it's an inch over the eggs

Put on high heat and bring to a rapid boil

Let boil for 12 minutes

Remove from heat

Remove the eggs immediately from the pot (I use a slotted spoon) and plunge them into cold water until you can pick them out of the water without burning your hands (a bit under a minute)

Put the eggs in the water before it gets hot.

Set your stove top to boil.

Allow the eggs to cook 10 minutes from the time it becomes a hard boil (big bubbles are breaking the surface of the water)

Place the eggs in a heavy saucepan. Cover with cold water and add the pinch of salt. Bring the water to boiling and lower heat immediately. (If eggs are hard-cooked in boiling water, they are likely to be tough and leathery.) Simmer for 1 or 2 minutes, and remove from heat. Leave covered for 20 minutes Works for me!!!

Ten minutes timed from when the lightly salted water starts to boil. Remove from heat and chill quickly in cold running water until eggs are cool. They will be easier to peel that way.

get the water boiling first then put in the eggs let them go let them boil for 5-7 min then turn the stove off and let them sit for about 10 min in the hot water rinse in cold water and I was told recently to help with the peeling to put salt in the water but I have not tried this yet
