I've been in China for a year now, traveled alot and haven't even spent one dollar.
The currency to go with is RMB and of course you can pay with it wherever you go. I always travelled with my debit card, even in the smallest towns (in China they still have 500.000 people) you can find a Bank of China and get cash at an ATM. One more thing with the ATM, you always get the best exchange rate.
If you want to take Dollars only exchange them in a Bank. They will ask you for a passport and give you a receipt with which you can change back your dollars, but not without that receipt.
If you find someone who wants to exchange dollars outside a bank, possibilities are high he's giving you fake or "dirty" money.

Its RMB you can change it at all Banks Of China you can change UK £ Euro or the US $ no problems cash or travellers cheques but don't change to many times from one currency to another you loose on commission so if pounds change pounds to RMB not to US$ then to RMB you pay twice take your country's money and change that,as of bank notes make sure they are not torn,marked with pen in any way warne or screwed up,as the banks are very fussy on this and you need your passport to change your money,so try and get new notes if not new make sure they are good quality like new.Your travel agent may change some for you to start with.If you change money in hotels they don't always give a good exchange rate.As changing on the street you need to know the rate that day and help from someone that knows what to do there are many counterfeit around,many take it to the bank and put through there machine to check they are genuine.As of credit cards you pay commission on changing to RMB and bank charges and at a high rate.

well you can change some currency into the Chinese Ren Min Bi but do not carry too much as china has pickpockets so as tourist u need to be aware.. u can bring travellers cheques and US currency but on a limit and in cities they accept credit cards...

Well, the obvious answer would be Chinese RMB. That's what I use in China. Hong Kong- use Hong Kong Dollar and in Hong Kong and lots of Shanghai and parts of Beijing you can use credit cards. If you have Chinese credit card, it is much better but some big stores in Shanghai and some banks in Beijing will accept AmEx.

most people will say to bring RMB ( yuan) to China, but because the dollar is so strong over there, bring dollars, and being from Ireland...we bring euros because the euro is really strong against the dollar and we get much better value for our money...hahahaha

you have to use RMB, the Chinese currency. if you're going to the south west, and i'd strongly recommend it, small dollar denominations might be useful too

in my limited travel experience, it pays to keep a stash of american dollars handy. ask a cab driver what the street exchange is.
