Modo de fazer: Preparation:
1. Ferva numa panela grande a água, o leite, o óleo e o sal.
1. Bring to boil in a big pan the water, the milk, the oil and the salt.
2. Tire a panela do fogo e adicione o polvilho. Mexa bem com uma colher de pau e deixe esfriar.
2. Remove the pan from the heat and add the tapioca starch. Mix well with a wooden spoon and let it cool down.
3. Ponha a mistura numa tigela, adicione os ovos e amasse bem. 3. Put the mixture in a bowl, add the eggs and knead well.
4. Adicione o queijo ralado e continue amassando até obter uma massa lisa.
4. Add the grated cheese and keep kneading until the dough is smooth.
5. Pegue a massa com uma colher de sopa e faça bolinhas. Dica: Passe óleo na mão antes de fazer as bolinhas. Lave a mão de vez em quando se necessário. 5. Roll 1 tablespoon of mixture into small balls. Tip: Grease your hands with oil before making the balls. Wash your hands once in a while if necessary.
6. Coloque as bolinhas numa forma untada com óleo ou forrada com papel manteiga. 6. Place the balls on a baking tray greased with oil or lined with baking paper.
7. Asse os pães de queijo em forno quente (200 graus) por 20 minutos ou até dourar. 7. Bake the cheese rolls in hot oven (350 degrees) for about 20 minutes or until golden brown.
8. Coloque os pães de queijo numa cesta e sirva quente. 8. Put the cheese rolls in a basket and serve them warm.
Remarks:
This recipe makes about 70 small cheese rolls.
Tapioca starch can be found in Asian grocery stores. It comes in a clear plastic bag and the standard pack has 450 grams.
Brazilians usually knead the dough by hand. It’s really hard work. I prefer to use a mixer to knead the dough.
“Pão de queijo” can be served as an appetizer or snack.
“Pão de queijo” can be frozen and baked directly from the freezer. Tip: Place the cheese rolls on a tray lined with baking paper. Put the tray in the freezer. When the cheese rolls are frozen, put them in a plastic bag and put them back in the freezer.
You can find "pão de queijo" mix (Yoki) in Brazilian supermarkets. It's very practical and convenient for those people who don't have time or don't like cooking.
"Pão de queijo" is gluten-free.
TUNA CHEESE BUNS
1/4 lb. Cheddar or American cheese
3 hard-boiled eggs
1 c. tuna fish
1 tbsp. minced green pepper
2 tbsp. minced onion
3 tbsp. chopped stuffed olives
2 tbsp. pickle relish
1/2 c. salad dressing
10 hamburger rolls
Combine all ingredients, except buns. Spoon on buns, wrap each bun in aluminum foil. Bake at 300 degrees for 15 minutes. These may be made and placed in refrigerator earlier in the day.

PAO DE QUEIJO
(Cheese rolls)
HEAT:
Preheat oven to 350° F
BLEND:
In a medium bowl:
1 package of Cheese Bread Yoki mix
1/2 cup water
2 eggs
BEAT:
4 minutes at slow speed
or by hand until get smooth consistency.
BAKE
Place dough balls spaced in a cookie sheet.
Bate at 350° F for 25 minutes or until golden brown.
SERVE:
Serve during breakfast, or teatime.
with a Brazilian coffee that you can
buy online directly
from Brazil.
STORAGE:
You can freeze the balls for about two months.
Hint: make the balls, place them in a cookie sheet and freeze them in the cookie sheet. Then take the frozen balls out of the cookie sheet and store in plastic container with a plastic film between the layers to make the removal easier.
To bake, take them directly from the freezer to the preheated oven. (do not thaw before baking).
Another Version...
2 cups sweet manioc starch or sour manioc starch
1 cup milk
1/2 cup margarine (I prefer butter)
1 teaspoon salt
1 1/2 cups grated parmesan cheese
2 eggs
Preheat oven to 400 degrees F.
Bring the milk, salt, and margarine to a boil.
Remove from heat.
Slowly add manioc starch, stirring constantly until thoroughly mixed.
Add the cheese and eggs.
Knead until smooth.
Form into balls approximately 2-inches in diameter and place on a greased baking sheet.
Sprinkle with Parmesan cheese.
Bake until golden brown.
Eat while hot.
Makes 20 cheese puffs.

Easy Cheesy Buns
1 Cup Shredded American Cheese -or- Your Choice
1/4 Cup Mayonnaise
1/4 Cup Chopped Ripe Olives - Your Choice
2 Tablespoons Finely Chopped Green Onion
1/4 Teaspoon Curry Powder
Dash Cayenne Pepper -or- Drop Of Tabasco
4 Hamburger Buns, Split and Toasted.
*Mix together the Cheese, Mayonnaise. Olives, Onions, Curry, and Cayenne.
*Spread onto Toasted Bun.
*Place under preheated broiler about 4" from heat, for 2 Minutes, until the cheese is melted.
*Serves 8.

(Cheese rolls from scratch)
Like many Brazilian foods, Pão de Queijo from scratch is tricky to prepare.
It is difficult to make the balls rise as much as the prepared mix. Also, the rolls can harden very easily if left overnight.
Then, after years making pão-de-queijo we came up with this recipe from one friend in our city of Belo Horizonte. Now we just make pão de queijo using this recipe because there’s no need to cook the manioc starch and the rolls will rise guaranteed. The secret is to use mashed potatoes in the dough.
Ingredients:
2 lb of manioc starch (polvilho). You can use either sweet or sour manioc starch. Some people complain that sour manioc starch causes heartburn, however sour manioc starch makes the rolls rise more. It is your choice.
1lb of mashed potatoes (just cooked potatoes, mashed with no salt or oil).
2 tablespoon margarine
1/2 cup vegetable oil
4 eggs
1 teaspoon salt
3 1/2 oz grated parmesan cheese
2 cups (500ml) milk
Preheat oven to 350° F
The mashed potato should be cool before using.
In a large bowl, mix all ingredients except the milk. Then add the milk slowly while you mix until you get a soft dough.
Place 1 inch balls spaced in a unbuttered cookie sheet and bake at moderate oven (350 F) for about 20 minutes or until golden brown.
Makes about 50 rolls.

Tapioca bread with cheese (Pão de Queijo)
Yield: 30 small cheese breads
2/3 cup vegetable oil
2 cups milk
4 cups tapioca flour
2 eggs, beaten
1 1/2 cups grated parmesan cheese
Combine the oil and milk in a pan and bring to a boil. Put the tapioca flour in a bowl, add the boiling mixture and mix well with a wooden spoon. Let the mixture stand for 10 minutes.
Add the beaten eggs and the parmesan cheese and mix well again. You will get a gooey, sticky mass.
Put a little oil on each of your palms and make small balls, 2 inches in diameter, (make sure when forming the balls that your hands are always lightly oiled). Place on a buttered baking sheet and bake in a 350 degree oven for about 15 - 20 minutes or until the top is light brown.
