This is definitely a matter of taste but here are my guidelines:
Soft-boiled ~ 3 minutes
Hard-boiled ~ 12 minutes once the water starts to boil. Put the egg(s) in a pot, not quite covered, in COLD water and put on the stove on high [10 on my stove] heat. Once it starts to boil, turn the heat down to med-high [7 or 8] and time for 12 minutes. When timer goes off, empty water from pot and immediately fill with COLD water (I run the tap before I empty water from pot) and time for 5 minutes. Shells usually come off very easily and the yolk is yellow; there is no gray around the outside of yolk.
That's my recipie anyways. ^.^

To boil perfect eggs simply place them gently into a saucepan and cover with cold water. Set the stove on high and bring the eggs to a boil. Boil for just two minutes. Remove the pot from the heat and let it sit for 12 minutes. In the meantime, fill a large bowl or pot with cold water and ice. When the 12 minutes is up gently lift each egg out of the hot water and set it in the ice water. This will stop the cooking process and help you avoid the green outer shell on the yolk.

Depends on what you want.
Soft boiled (hard white / soft runny yolk) put in the water heat and when the boil starts as a real boil (not just those small bubbles at the start...
1 minute exactly.
Then pull it out and cool it off or better yet open it immediatly. It will continue to cook inside the hot shell.
If you want hard boiled, the same as above but increase the time in the boil to 3 minutes. Most people prefer them cooked for 5-6 min but 3 is the gourmet time.

~*~BOILED EGGS HOW-TO
Bring eggs to room temp before using. If the egg are straight from the refrigerator they can be warmed gently under a flowing hot tap. Place sufficient water to cover the eggs in a saucepan & bring to a gentle boil. With a tablespoon lower room temp eggs carefully into the water. When the water returns to a boil start timing & reduce heat to simmer gently. Fast boiling makes the egg whites tough & causes the eggs to bang against each other & crack. Timing boiled eggs depends on the size & degree of hardness desired. You should start timing the eggs from the moment the water first boils.
Soft-boiled (soft whites, soft yolks):
Large size: 3 minutes 20 seconds.
Medium size: 3 minutes.
Small size: 2 minutes 40 seconds.
Medium-boiled (hard whites, soft yolks):
Large size: 4 minutes 15 seconds.
Medium size: 3 minutes 50 seconds.
Small size: 3 minutes 20 seconds.
Hard-boiled (hard whites, hard yolks):
Large size: 10 minutes.
Medium size: 8 minutes.
Small size: 7 minutes.

I keep the eggs out until they are room temp so when I put them in the boiling water, they won't crack. I also add salt to the water and put them in slowly. I boil for 11 minutes.

normally around 30 min or so but here's the secret where you don't have to look at the time. trust me this works. put enough water in there that it barely covers the top of the egg. then let it boil until the water is almost out. it will come out perfect. good luck to you and i hope this answer makes it to your best answer.
