Here's an online crock pot recipe book I like to dip into every so ofter. I don't think there is anything you CAN'T cook in a crock pot!
This is my favorite!!
Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

Crock pot roast is awesome! And yes, you'll need some liquid - about 12 ounces for a 2 or 2.5 pound roast. Beer is best, though beef broth would also be good, and I've even used Dr Pepper successfully in the past. Definitely put the carrots and onions at the bottom of the pot, then the liquid, then the meat. If you add potatoes, put them in last - if you put them on the bottom, they'll absorb too much liquid and turn to mush. Carrots are tougher; they can take it. And season the meat before it goes in the pot. Even a packet of onion soup mix is good for that.

Corned beef brisket is always good! Put that in the crock with the seasoning packet, about 4-6 cups water (depending on if you have a beer to dump in it, that's good!) Quartered onions, quarted potatoes, some celery, and a handful of baby carrots from the freezer and you're good to go!
On a lazy day, make split pea soup, but you'll have to be around to stir it every hour or so.

Stuffed Peppers
4 bell peppers
2 beef bouion cubes
hamburger meat
1 egg
italian breadcrumbs (eyeball it.. about 1 1/2 cups worth)
2 tomato sauce
2 tomato paste
pepper/salt to taste
1)combine meat, egg, and breadcrumbs until meat is slightly firm
2) cut bell peppers length-wise (take out middles and seeds)
3) pack each half of the bell pepper with meat
4) put tomato sauce and paste as well as 1 can of water in the crock pot.
5) set bell peppers in sauce and add bouion cubes
You can either do it low for 8 hours or high for 4. Which ever suits your schedule.
You can also do weiner stew. Its VERY simple
about 6 potatoes peeled and cubed
1 pckg of hot dogs - cut
2 tomato sauce
1 tomato paste
1 can water
combine all of the above in the crock pot and cook for either low 4 hours or high on 2 (until potatoes are tender)

Just what ever you want to cook put it in layers. Meat, veggies, spices then liquid. Put it on low and 8 hours later it will be cooked. If you want it ready in 6 hours, medium and 4 hours high.

Anything goes. Whatever recipes you would use in the over or on th stove, you can use in the crock pot. I only would recommend not using it for pasta, the meal will be very starchy and the pasta will come out mushy,

Pork Stew
Ingredients:
1 Tbs oil
1 1/2 lbs boneless pork loin, cut into 1-inch cubes
1/2 lb baby carrots
1/2 lb new potatoes, quartered
1 red pepper, seeded and coarsely chopped
1 16-oz. package frozen mixed vegetables
1 8-oz. can whole baby corn, drained
1/2 tsp salt
1 tsp black pepper
1/2 tsp dried marjoram leaves
1 can reduced sodium chicken broth
2 packets brown gravy mix
Directions:
Heat oil in a skillet over medium-high heat. Add pork cubes and brown. In the stoneware, combine pork and remaining ingredients, except broth and gravy mix. Combine broth and gravy mix and pour over ingredients in the stoneware. Cover cook on Low 8 to 10 hours or on High 4 to 5 hours.

Chicken & Noodles:
Put chicken breasts (bone in) in the crock pot, add sliced onion, celery, green pepper and add chicken broth (canned works well) cover and cook all day. When chicken is cooked, remove to a warm platter - add noodles to the chicken broth and cook on high until noodles are tender. Enjoy!

My Swedish Meatballs:
2 cans mushroom soup
1 8oz cream cheese
16oz sour cream
milk to desired thickness
dried basil leaves
salt and pepper to taste
frozen meatballs
Combine all ingredients in crockpot except for meatballs, stir mixture well until everything is blended. add meatballs, set setting on low for 8-10 hours. when you come home, boil egg noodles, and serve Swedish Meatballs over egg noodles.
