The majority of answerers said that the reference was for the soul, or intelligence, or our spiritual form; and that the statement in Genesis was more metaphorical.
Fair enough (though I've yet to hear the criteria for what is metaphor or poetic, and what is literal).
So here's my next question. Why weren't our physical bodies made better? More limbs, more eyes, greater muscles, better senses, tougher skin, quicker healing, and so on.
I know many will say that these weren't needed before the fall of man... so why were animals given these features if they weren't needed? Or did armadillos have soft skin, dogs could only smell like we can, and spiders walked on two legs?
And I don't consider the desire to not question "God's plan" a virtue. I think blind faith is one of the prime causes of misery in life.

If "made in God's image" is to be taken as a metaphor or poetic then one can only assume the whole book is not to be taken literal.
My theory
We are a processes of an alien creation, mutated and evolved under the watchful eye of that spices, the reason still unknown, however as they appeared to the civilizations, they were told "programed" to do as directed, they the alien species are perhaps trying to develop us to use in the future or for their own medical needs. Therefore no matter what we do it is only for today, there is no reasoning for why we are what we are

People ask, why did God make bugs? But the question should
be, why did God make man? Everything on this world has a
purpose. To till the soil, feed other creatures. Break things down,
pollinate the plants for rebirth. But man destroys everything in
his path.
This is how I like to explain it. This world was created as a
tourist spot for the spirit world. A place Gods spirits could come and enjoy the beauty. Watch the animals play. But the spirit has the ability to get inside things. Just like it is living inside the human
body now.
Everything in our world is made of atoms. And they are alive!
They move around. And as you know, there is a lot of SPACE
in between the particles of each atom.
Our spirits stayed around too long, and became trapped here
by the forces that create our physical world. Then God had
to create human forms to house the spirits. Eventually ending
up in the form we have today.
Scripture refers to us often as being prisoners here, and in captivity. In Hebrews 11, it says the faithful were true, because they knew we are strangers and pilgrims on this world.

something not often recognized even by Christians is that at the time of creation, God did create us perfectly. Think about some of the feats of ealry man- science would decieve us into believing we are progressing, getting better and that ancient "caveman" was dumb and weak when the very opposite is true. Early man had a strength and stamina that we cannot imagine, they had an intelligence that was phenomenal- they lived a lot longer and at our ripe old age of 90- they were in their prime! We talk about medicines and technology making us better and better, increasong our life span but we are just maintaining diseases and living a miserable life- in the past food was medicine and medicine was food. God gave certain laws about what not to eat- this was so that our bodies would function to its fullest. Today we see increasing toxins in the air, increasing toxins on our soil, we are eating things that were never intended for food- this not only affects our bodies but our children and grandchildren because of the way babies develop in hte womb- we are increasingly getting weaker and weaker - seeing disease that we did not see even 10- 15 -20 years ago. this is not the fault of God- sin enteres the world , we make poor choices, we do not take care of the temple God has given us and we abuse the earth He gave us to dwell in.
It is a huge misconception and there is no evidence that early humans were dim- on the contrary there is much evidence that they lived a life of abundance and were far more advanced than we were - it takes a lot of humility for a scientist to admit this - who wants to confess to a world and bodies that are degenerating- in an effort to become our own "god" we have to make the evidence fit into our own prideful molds and throw aside what does not work for us.
Our bodies still have an incredible ability to heal and repair itself- often we get in our own way with things that God never intended for us to consume or do!

We were made in THEIR image, male and female. We were one. I believe Adam and Eve where as one and One with God. In the garden they were not gonna die, but they decided to go against God and start to judge and think in dualistic terms. Under influence of the snake or ego-mind, God said judgement lead to death, but we decided to try it anyway. Since the fall we are in the dream that we are seperate. The more sin the more seperation. We (Eve we are female energy)are stuck with the ego-mind snake in this dream. Until we divorce it and marry Jesus (Adam??) and wake up out of the dream where we are seperate from God through regaining Christ consiousness. God is with us and we return to our original state/ Or the state God had intended for us.. We are God in lower consiousness.. There is nothing outside of God so we see things wrong, we are veiled by the ego-mind. This veil is lifted at the wedding//
So we were made better and will be again if we stop dualistic thinking and see only God=make the choice of the Christ and topple the ego-mind../conquer fear and we will partake in the Tree of Life//
Oh I kinda missed your question I see,,,climb up the ladder of consciousness and discover senses you never knew you had!!

Well it is perplexing that our bodies should have so many vulnerabilities but God made us in His image and obviously saw no need to change it. He could have, after all look at the adaptation many creatures have made over the years to become better at their particular job. Perhaps we have everything we need to complete whatever it is He wants of us.

If you studied the human body , you would know that God created us so perfectly...if you do not like god's creation try creating something and give it life... will you not be ashamed of god when you stand in front of him and tell him why didn't you crete us in another way...god has favoured humans over many of his other creatures, yet they still never thank him or show any appreciation...

We are not made in the image of god. We ARE the image.
We evolved ourselves to the point we have (very little protection against the atmosphere around us, i.e., no hair, etc) due to our drive to feel pleasure. We've evolved ourselves to that point all on our own.
