Everybody drools in their sleep at one point or another. This is simply the saliva glands in the rear of your mouth becoming relaxed and flow. Obviously, when you keep your mouth closed during the day or when you're awake, the saliva remains inside your mouth. But, when you open your mouth, saliva tends to flow, because your glands are relaxed and you're allowing everything to flow.

Drooling in your sleep (assuming that does not happen when awake) simply means your brain has relinquished bodily functions to a state of relaxation.
To many people that, that is a good enough sign of how well they are asleep but this is no guarantee.

You can look at it in the same way a person that is sleeping tends not to be disturbed by conversation in the next room. The brain relaxes and does not react to sound coming into the ear of the sleeper.

By the way, drooling is mostly caused by the position in which someone sleeps/lays and not the very fact that they are sleeping sound.
