Breakfast is one of my favorite meals and here are the top 20 things I eat in the morning when I have time.

Many of my breakfast dishes use ingredients from the previous night's dinner

1. Creamy Grits with either curry shrimp or fried or grilled fish. Pair that with coffee and fresh fruit

2. A bed of grilled veggies (typically left over from dinner) topped with an egg sunny side up and fresh fruit

3. A bowl of flavored chicken broth, clear (mung bean) noodles, tofu and veggies with 'egg blossoms'

4. Fireroasted aneheim chilies (peeled and seeded), goat cheese, caramelized onions and eggs (beaten with a little cream)+ (salt to taste)--baked in an oven. Topped with fresh green tomatillo sauce sprinkled with cilantro and served with homemade corn tortillas and authentic refried beans. YUM!

5. "Left over" Fried rice--take chopped veggies (snow peas, fresh green beans, bok choi, onion, or whatever you like) stir fry briefly with sesame oil. Add rice and salt, stir. Add chopped bacon or ham, tofu (firm) and a scrambled egg. Add a minced clove of garlic. This works well with brown rice.

6. Dim sum and jasmaine tea (a super personal favorite)

7. Oatmeal (steel cut oats are yummier but takes a while to cook) with fruit and soft boiled sesame egg--soft boiled egg, drizzled sesame oil salt, 'accent' and pepper

8. Fresh hot bagel with cream cheese topped with smoked salmon red onion slivers 'fruity tea' and fresh fruit

9. Banana bread french toast. Take a banana bread loaf--slice it,let it dry out for a day. Put it in french toast batter and prepare as you would french toast. This is yummy served with grilled ham. You can use stale cinamon roll, stale poppyseed loaf or just about any bakery bread that has gone stale, dry or hard.

10. Veggie quiche of any kind or frittata (cooked soft) served with fresh fruit.

11. Spanish tortilla (left over baked potato is wonderful in this dish, caramelized onion warmed in a skillet) topped with beaten eggs (plus a little cream) and cooked like a fritta (started in a skillet on a range top and finished in an oven).

12. Hash made of left over oven roasted potatoes and grilled meat (left over--any meat--chicken, sausage, steak etc will do), sauted onion and bell pepper, cooked in a skillet and topped with a sunny side up egg

13. Hash made out of beets and potatoes, sauted with a little onion until soft, served with eggs or any breakfast meat

14. Crepes--spinach-cheese-mushroom
or fruit crepes served with coffee or tea

15. Sometimes I put presoaked dried beans (pinto beans, red beans or what ever you like) in a crockpot with smoked ham hocks the night before. When you wake up, you will have a wonderful 'southern' bean soup. This is great with hot cornbread.

16. For something simple, I like hot tea and fresh fruit and farmer's cheese with some fresh bread

17. Meat or cheese or roasted pepper empanadas or tamales served hot with fruit and coffee.

18. Hot fresh homemade biscuits (do not use a mix--yuck--to many processed ingredients) served with grilled chicken, sandwich style.

19. Fresh hot homemade almond scones served with any breakfast meat and coffee

20. Sweet potato pancakes or muffins, served with eggs and meat.

Best breakfast I ever had - on a cruise with a balcony - I had French Champagne, eggs benedict, OJ, toast and coffee as we sailed the Caribean Sea

ya know waffles sounds good. and if by some chance you have a waffle maker and some strawberries then strawberry waffles and a small cheese omelet. or you could always whip up some french toast really quick like and use chocolate syrup on them. yummy now I'm hungry again!!

That is up to your own tastes, but if you can not decide, then wait till mid morning and have brunch, maybe an omelet !!
