These are from, "Canning, Pickling & Preserving" by Marion H. Neil, published in1914.
10 lbs, watermelon rind 1/2 oz. cloves
1 qt. vinegar 1/2 oz. cinnamon stick
2 lbs. sugar
Cut the rind in small pieces, peel, remove all the red parts, cover with cold water, and let stand for several hours. Boil in water until clear.
Now lift out, and drain well, and place in a large basin. Put the vinegar into a saucepan, add the sugar and the spices, boil for ten minutes, then pour at once over the watermelon rind. For three days in succession, pour this mixture boiling hot over the rind.
Seal in sterilized jars.
Second recipe:
Remove a thick paring(about 1/3 inch) from the watermelon rind, cut out all the pink part; then cut pieces of uniform size, about two by one and a half inches.
Pour into a preserving kettle, cover with boiling water, cook until soft and then drain. Put three and a half pounds of rind in a saucepan, and add one and one-half cupfuls of vinegar, one and a half pounds of brown sugar, one half an ounce of cinnamon stick, broken in pieces, and
one fourth ounce of whole cloves. Bring slowly to the boiling point, and let simmer for two and one-half hours.
Pack into sterilized jars, add syrup to overflow the jars and cover.

Watermelon rind pickle Recipe

Title: Watermelon Rind Pickle
Categories: Canning, Fruits, Harned 1994, Kentucky, Shaker
Yield: 1 batch
7 lb Watermelon rind; peeled
2 1/2 qt ;Water
1/3 c Salt
6 1/2 c Brown sugar
2 c Vinegar
1 c ;Water
1 tb Whole cloves
2 Cinnamon sticks
2 Lemons
Pare off the outer green from watermelon rind and cut in 1" squares.
Put in large bowl and pour over them the salt and water mixed. Let
soak for three days. Drain and let stand in fresh water for one hour.
Make a syrup of sugar, vinegar, water and spices. Cut the lemon
(rind and all) paper thin. Put melon and lemon into hot syrup and
boil until watermelon is clear. Seal in jars.
