Because fish is fish, singular or plural. Fishes is not a noun, but a verb. (He fishes for the last piece of candy)

Fish is both singular and plural. When plural, it refers to all of the fish collectively in any waters being discussed without trying to distinguish among the types.. Fishes is the term used to indicate you are differentiating or referring to the kinds of fish, e.g. carp, buffalo, catfish, sharks, blue fin tuna, red snapper, etc.

These are the proper uses of the terms.

Historically, it is because "fish" was considered to be a mass noun like flour and rice. When you catch fish in a net, you cannot count them, they are like rice in a bowl, you don't count the individual grains.

The plural for "fish" is either "fishes" or "fish".

It is the same for the plural form for zebra: "zebras" and "zebra" are both correct.

because "fishes" is a verb, as in "my father fishes the far end of the lake every day"....so even though "fish" is a noun it is also used as plural.. just another oddity of our language..

Any word with soft vowel sound is allowed to be left alone when spoken as a plural. For example, the singular word "deer" can also be used as a plural in "I saw a group of deer" or "I saw seven deer crossing the brook".
