This is my favorite:
In the name of God, the Compassionate, the Merciful.
Praise be to God, Lord of the Worlds,
The Beneficent, the Merciful.
Owner of the Day of Judgement,
You (alone) we worship; You (alone) we ask for help.
Show us the straight path,
The path of those whom You have favoured;
Not that (path) of those who earn Your anger nor of those who go astray.

this prayer is usually sung, you can hear a girl singing the first half of it here: http://www.youtube.com/watch?v=3QgLU7yGpcE
Adon olam, asher malach b'terem kol yetzir nivra. L'eit nasah b'cheftzo kol azai melech shemo nikra.
V'acharei kichlot hakol, levado yimloch nora; vehu haya, vehu hoveh, vehu yiyeh v'tifarah.
Vehu echad, v'ein sheini, lehamshil lo lechachbira. Beli reishit, beli tachlit, velo ha'oz vehamisra.
Vehu Eili, vechai go ali, vetzir chevli ve'eit tzarah, vehu nisi amanos li, menat kosi beyom ekra.
Beyado afkid ruchi, b'eit eishan ve'aira, ve'im ruchi geviyati, Adonai li velo irah.
You are the Eternal God, who reigned
before any being had been created;
when all was done according to Your will,
already then you were Sovereign.
And after all has ceased to be,
still You reign in solitary majesty;
You were, You are,
You will be in glory.
And You are One; none other
can compare to You, or consort with You;
You are without beginning, without end;
Yours alone are power and dominion.
And You are my God, my living Redeemer,
my Rock in time of trouble and distress;
You are my banner and my refuge,
my benefactor when I call on You.
Into Your hands I entrust my spirit,
when I sleep and when I wake;
and with my spirit, my body also:
Adonai is with me, I shall not fear.

For me, prayer isn't just communication from a person to God. It also includes communication to the spiritual world. This may offend you or others but our relatives who have passed before us (into the spiritual realm) need our prayers.
One of my favorites, among hundreds, is:
O' my God: Father, Son, and Holy Spirit;
I adore you profoundly.
I offer you the most precious body, blood, soul, and divinity of Jesus Christ, truly present in all the tabernacles of the world.
In reparation for the outrages, sacreligious, and indiffernces by which he is offended, I beg conversion of poor sinners.
By the infinate merits of the Sacred Heart of Jesus and the Immaculate Heart of Mary I beg conversion of poor sinners.

And grant unto us, O Master, in the coming sleep, rest for body and soul, and preserve us from the gloomy slumber of sin, and from every dark and nocturnal sensuality. Subdue the impulses of passions, extinguish the fiery darts of the evil one that are cunningly hurled against us, assuage the rebellions of our flesh, and every earthly and fleshly subtlety of ours lull to sleep. And grant unto us, O God, a watchful mind, chaste thought, a sober heart, a sleep gentle and free from every satanic illusion. Raise us up at the time of prayer firmly grounded in Thy judgments. All the night long grant us a doxology, that we may hymn and bless and glorify Thy most honorable and majestic name: of the Father, and of the Son, and of the Holy Spirit, now and ever, and unto the ages of ages. Amen

Mary's prayer to God in Luke 1:46-55 is a good one:
"My soul proclaims the greatness of the Lord;
my spirit rejoices in God my savior.
For he has looked upon his handmaid's lowliness;
behold, from now on will all ages call me blessed.
The Mighty One has done great things for me,
and holy is his name.
His mercy is from age to age to those who fear him.
He has shown might with his arm,
dispersed the arrogant of mind and heart.
He has thrown down the rulers from their thrones
but lifted up the lowly.
The hungry he has filled with good things;
the rich he has sent away empty.
He has helped Israel his servant,
remembering his mercy,
according to his promise to our fathers,
to Abraham and to his descendants forever."
With love in Christ.

I love the prayer of Saint Francis which asks for the power to live (by example) the goodly opposites of many wrongful traits that people on earth exhibit.

To me nothing is more beautiful then when someone accepts Jesus as their Lord and Savior.
So the prayer of salvation is most beautiful.
