The american version of Italian food, pizza, should not be used to represent Italy. I would go with fettucini alfredo, Eggplant parmesan, or something similar.

Risotto

Risotto is a traditional Italian dish made with a suitable variety of rice such as Arborio, Carnaroli or Vialone Nano. It is one of the most common ways of cooking rice in Italy. It originated in North Italy, specifically Eastern Piedmont and Western Lombardy, where rice paddies are abundant. It is one of the pillars of Milanese cuisine.

When risotto is cooked, the dry rice is fried briefly in oil before the broth is added. Other dishes exist that are similar, but they should not be called "risotto" if the rice is not toasted.

Recipes include "Risotto alla Milanese," made with chicken or beef stock and saffron, which is traditionally served with osso buco (a stew made from veal bones), and "Risotto al Barolo," made with red wine, but thousands of variations exist, both with vegetables and meat, as well as risottos made with various other wines, cheeses, or even fruits. "Risotto *****" is a specialty of the Veneto region, made with cuttlefish cooked with their ink-sacs.

biscoli.......bruscheta.........parmesan cheese..........pesto...........pine nuts......spaghetti and pasta.....risotto....calzones.........italian breads..........you dont list any details about your project but if you have to provide something ....i suggest you buy some italian bread and have the deli slice it for you and make a party type tray with tapenade, pesto, and some of the various italian cheeses.......good luck.....and if this is the type of thing you need go to your local deli and browse, they can point out the various breads and italian spreads, and cheeses like gorgonzola,parmesan,feta.....etc.........the deli will also have italian meats available if you want to include those

spagetti or pizza are usually associated with italy wine is too but pizza and pasta are more closly assosiated with italy

no doubt , pizzas & pastas . but u must try mushroom in lemon creme sauce with garlic bread , mozerella skewers , herbed tortellini soup .
