May the hairs on my arms just stood up thinking about that.. i hate the sound and feel of cutting into frozen meat... It's quite difficult too... get yourself a electric knife.. like for slicing trukey.. then let the meat partially thaw... use the Ek on it then...

I would say portion it out according to what you are planning on serving and the number os servings need. You can make many things with this including beef tips stroganoff and shis kabob

Ask the market to with electric cutter to trim them into 5 lbs each. This you can store in your freezer.

Other than taking it to a meat-cutter (a grocery store might do it for you), I'd recommend a band saw.
