Quantum mechanics puts definite limits on the amount of knowledge a being in the universe can know and in fact says some things are a pure funciton of probability and thus can neverbe known with certainty. This of course destroys the argument of an omnipotent G-d, however christians only sem to argue about evolution and not quantum mechanics, Why?

Most Christians can't even begin to understand quantum mechanics. With evolution all they have to do is memorize the handouts, then repeat them by rote, no comprehension of the actual principles is required. When someone can come up with such a handout on Quantum Mechanics they will complain about it as well. It should be pointed out that the uncertainty principle restricts what humans can know and do, not necessarily what a God can know or do. Certainly the founders of quantum mechanics in no way saw the theory as impacting on belief in God, most of them were believers of one form or another. Recall the famous exchange between Albert Einstein and Neils Bohr in Copenhagen in 1927. Einstein said "God does not play dice with the universe, Niels!", Bohr replied, "Stop telling God what to do, Albert!" Clearly the existence of God was not in question to either one.

Because at the moment they're obsessed with evolution

G-d created quantum mechanics. i really doubt he lost the blueprint.
