soak them overnight, adding about a tablespoon of baking soda (this reduces the gaseaus effect that most beans and legumes have on sensitive stomachs). Then you're good to go, for the cooking proccess - which is also speeded up by the soaking

My Mom soaks them overnight and cooks them the next day. They are always yummy.
That's too much work for me, I use canned beans and spice them up.

Soak over night, approx. 12 hours. Boil in 2 quarts of water for about 2 hours.

I soak overnight, rinse, drain and then slow cook them the next morning. Slow cooking tastes better than fast cooking.

A few Tips to apply next time you cook any type of dried bean.
My family is cajun, this is how we do our Red Beans.
Soak them all night or boil them for 30 minutes, then cover and let them set for a couple hrs.. then just cook em. Don't forget to check every now you may need to add water. Give yourself plenty of time you want them to be really tender. Add a couple tablespoons of oil & a 1 Tablespoon of sugar VERY IMPORTANT! . It makes them tender and the sugar doesn't really make them sweet it just enhances the bean flavor. You could cook the beans a day early.
When you get ready to finalize your pot of Red Beans. Make a little roux with about 3 T flour & 3 T oil. Brown it on med. low stirring constantly it could take about 15 minutes to get it good and dark. Add some of your bean juice to that, mix it keep adding juice till its well incorporated then add all that to pot. (If you just pour it in without incorporating it first it will clump). Then brown & add your sausage, tomatoes, peppers, onions, spices etc, but you'll have to cook it an hour or so more. Remove from heat don't forget to add a couple handfulls of chopped green onions stir! Then you want it to sweat (let it sit) for at leat 20 minutes before you eat it.
I like brown rice is better with Red Beans, it takes about an hour to cook too. Then all you need is a crusty loaf of french bread and a BEER! That's the beauty of it nothinghas to be perfect and you can just check it now and then till it's done.
In a big heavy dutch oven:
1 lb of red beans
water to cover (2 qts or more.never measured)
SOAK ALL NIGHT
2 T oil
1 T sugar
3 T cajun seasoning
4 boullion cubes
Add all this to pot, cover and cook beans. till almost tender.
Aprox. 1 hr. before they are actually done do the following:
5 or 6 slices of bacon (sliced in pieces)
add a little more oil to those drippings
1/4 chopped ham
1 lb of good smoked sausage in chunks(andouille if you can get it)
2 onions chopped
1/2 bell pepper chopped
1/4 cup celery chopped
1 clove garlic minced
1 lg can chopped tomatoes
parsley chopped
couple bunches of green onions
Adjust the creole seasonings to your taste
salt & pepper
3 t oil & 3 t flour make a roux
Brown (on med.) bacon, remove. Saute onions, celery, peppers about 5 minutes, add sausage, ham. brown a little. Remove. Drain some of that grease off.
To a seperate heavy pot or skillet add the 3 t oil, & flour, stir on med till brown (don't burn!) Add some of your bean juice till mixed then add to pot of beans, add everything else except salt & pepper & green onions. Cover & cook about 45 min. to an hour. Remove, taste then add salt pepper if it needs it, add green oinions let sit at least 20 min. Serve when ready.
