Most drywall textures are sprayed on using a "hopper" and compressed air and then can be "knocked down" using a wide drywall taping knife (this knife is actually a wide straight edged trowel). The mud is thinned then blobs are shot onto the drywall surface. The blobs are then flattened out using the wide taping knife with the knife blade almost parallel to the work surface. Just search "knockdown texture" as there are many diy sources on the net.
For examples of what a knockdown texture looks like I did a quick search and found the following

Is this the type of finish (i.e. soft stucco) that you are looking for?

Large brush (6" with widely spaced bristles) and a trowel. Not exactly sure what you mean by 'soft,' but most stucco looks are from mud that is spattered on the wall with the brush and then lightly smoothed with a trowel.

Make sure the joint compound is soft enough and practice with a bunch of different items on a spare piece of drywall.

It the compound is too think, it will be hard to shape.

Usually, a big bristled brush is what is used...

i use a 12" tapeing knife. 1 add a full taping tray of water to a five gallon bucket of mud. play around with a scrap peice. very little mud will look real good. you can go over it again after it dries to add to the appearance.
