My Favorite is scrambled eggs and sliced ham? I am working out so I am working on eating alot of eggs for protein. I am interested in learning some yummy ways to fancy up my scrambled eggs so I don't get bored.. Please keep in mind.. I don't like eggs any other way but scrambled.. Any suggestions?

I like to put in small chuncks of squash (the small zuccini) and some garlic salt. It is a different but good recipe.

Cheese, mushrooms, green peppers, and onions are good additions. Crumbled bacon and chunks of tomato with the skins removed are also delicious.

I like to put a tablespoon or so of salsa on eggs that I've scrambled with a little cheese and a few black beans left over from another meal. It's good served in a warm tortilla.

I like using scrambled eggs as a base like you would a baked potoato. Sometimes I use shredded pepper jack, some salsa, sour cream and sausage on top. I've also topped fresh basil, mozzerella, cherry tomatoes, prociutto (sp?) and a marinara sauce. Fresh chopped taragon is really good too. Also cooking really thin like a crepe and rolling fruit up inside is good. Add a 1/4 tsp of sugar to the beaten eggs and keep heat low to medium.

Try scrambled eggs with zucchini and onions, it is delicious!!
My Italian grandma used to make scrambled eggs with a few splashes of tomato sauce and onions in it also, and that was really good too!

Try them with asparagus (tips from the can work best), and Swiss cheese. Yum.
I also like them with salsa (tomatoes, chile, and onions).
Do you like omelets? They are a lot like scrambled, but you can put things inside them (like melt the cheese and add the ingredients). I am really picky about eggs, but I love omelets, also. Try mushrooms and cheese in your omelet.

Experiement. Have fun.

I melt a bit of margerine in the pan and crack my eggs into a small mixing bowl, add a small bit of water, salt, and pepper and whisk then pour into the pan. Rake them inward toward the center of the pan while frying. Remove the pan from the burner before they get too done and they will cook the rest of the way perfectly in the pan. These are always less dry and they are fluffier than adding milk.

HUEVOS RANCHEROS

This simple but highly seasoned breakfast, brunch or supper dish became fashionable during the craze for Tex-Mex food that began in the Southwest and California in the 1940s. Our recipe highlights tortillas that are currently available in a variety of flavors, like sun-dried tomato and jalapeño.

3/4 cup bottled salsa
1 medium plum tomato, chopped
3 tablespoons chopped fresh cilantro
4 tablespoons vegetable oil
4 7- to 9-inch flour or corn tortillas, flavored or plain
8 large eggs
1 1/2 cups (packed) hot pepper Monterey Jack cheese (about 6 ounces)


Preheat oven to 350°F. Mix first 3 ingredients in medium saucepan; set sauce aside. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add 1 tortilla and cook until just beginning to brown, about 30 seconds. Using tongs, turn tortilla over and heat 10 seconds. Transfer to large sheet of foil. Repeat with remaining tortillas. Enclose tortillas in foil and place in oven to keep warm.
Divide remaining 2 tablespoons oil between 2 medium skillets and heat over medium heat. Break 4 eggs into each skillet; sprinkle with salt and pepper. Cook until just set on bottom, about 2 minutes. Sprinkle with cheese. Cover skillets; cook until eggs are cooked as desired and cheese melts, about 2 minutes. Bring sauce to boil.
Divide tortillas among 4 plates. Top each with 2 eggs, then warm sauce.

Makes 4 servings.

It's not horribly difficult, but it's definitely worth it. I hope you decide to try it!

Huevos a la mexicana (Mexican style eggs)

Fry chopped onions, chopped chiles (jalapeno or serrano), when well fried, add chopped fresh tomato, fry all together.
Add beaten eggs and salt.

Eat with corn tortillas

Migas con huevo (tortilla chips & eggs)

1 or 2 tortillas (flour or corn tortilla) tear them into small pieces.
Fry them with little oil, and when well fried, but not as hard as chips, add 1 or 2 beaten eggs and salt.

Yummy!!!

Other egg ideas:

-breakfast burritos (scrambled eggs, sauteed onions, bacon crumbles mixed together and wrapped with a tortilla)

- fried rice (as long as you cook it yourself, you can control the salt/fat levels)
