the italians just leave it out on their countertop... but i've heard various other methods (put into tupperware with a sugar cube...)
what do you suggest?

I lived in italy for three years.
all of my neighbors just left it out on their countertop until it was gone--but that was because they finished off a block of cheese in only a matter of days.

Otherwise I suggest that you put it in the refrigerator in a tupperware near your other dairy products. It'll keep longer than if you were to keep it out on your countertop.

I just put mine in a zip-lock in the refrigerator. I have a chunk of Parmesan Reggiano that has been in there for a while. I use it but it started off large and it is fine. If you are going to enjoy it as an eating cheese then I would let it sit at room temp prior to serving....the flavor comes out more. Leaving it out on the counter? Well my Italian mother never did this, she did leave other things out....questionable to me but not Parmesan. The process of making cheese like this is not refrigerated so it makes sense to leave it out I just never have.

O.K. .... Here's the deal .. If you're Italian, I agree; leave it on the counter.
Chances are; It's not gonna last too long anyway.
If not; Freeze it! You'll be amazed how easily it crumbles when thawed. This works great with Romano too!
Try it!
Parmesan comes from cows milk.
Romano comes from Goats.
Try Romano ..... What a kick in the pants!! :<)

Salt is commonly used as a preservative. Salt has been used since the origin of cheese, along with fermentation and dehydration, to preserve cheese. These methods are still employed in modern times. Additionally, techniques such as pasteurization and refrigeration also assist with preservation of the cheese...I just keep it in a Ziploc tub with a lid on it...

I store it in a Tupperware container for a slice of pie. I keep it in the refrigerator. Can't imagine not keeping it cold... yuk.

in the fridge, it will last longer, but cheese IS mold so the counter top is fine
