From my very own recipe website:

Vegetable Stuffed Sweet Peppers

2 large green bell peppers
2 large red bell peppers
1/2 cup "Quick Cook" white rice
1 (15.25 oz) can whole kernel corn, drained
1 (2.25 oz) can sliced ripe olives, drained
3 green onions, chopped
1/2 tsp seasoned salt
1/4 tsp garlic pepper
1 (14.5 oz) can diced tomatoes, undrained (divided)
1/3 cup dry red wine
1 (6 oz) can tomato paste

Slice tops off peppers and remove seeds and inner ribs. Stand the peppers upright in a 5 qt slow cooker.

Remove stems from tops and finely chop pepper tops.

In a medium bowl, combine chopped pepper tops, rice, corn, olives, green onions, seasoned salt, garlic pepper, and 1/4 cup of the tomatoes. Mix well.

Stuff peppers with mixture, packing lightly.

Mix remaining tomatoes and their liquid with wine and tomato paste until well blended. Pour over and around the peppers in slow cooker.

Cover and cook on low for 6-7 hours.

At least you're realistic about the amount of preparation you're willing to do. Your local library probably has several cookbooks which contain nothing but slowcooker recipes, and other cookbooks with slowcooking sections. If your library doesn't have these books, ask the librarian for an interlibrary loan. My basic recipe is to put a large chunk of some sort of meat in the cooker, add a little liquid, and possibly add some minced dried onions. The minced dried onions can be found in the spice & seasoning section of the store, and they work very well in a slow cooker. I think that they taste better than fresh onions, and they are certainly much faster to use. The cheaper cuts of meat are actually better in a slow cooker than the more expensive ones. The cooker will give the cheap cuts time to break down over the long cooking period. So, use dark chicken meat, thighs or drumsticks, rather than breasts. Use a chuck or 7 blade roast, rather than round. Canned broth is great to put in a slow cooker, or use flavor base, mixing it with a little hot water. I like Better than Buillion flavor base, as it has a lot less sodium than buillion cubes. Wine is a great liquid to add, too. Just remember that slow cooking will produce a lot of liquid, and you usually won't need to add more than a cup. Slow cooking is a great way to keep from heating up the house, too.

The wonderful thing about slow cooking is that it is really easy and you can use almost anyhthing. Start with a large quantity of meat, 2 lbs or so. What ever is on sale will work beef chicken fish lamb whatever. Next take all your favorite vegetables and cut them into nice bite size pieces. Top it all off with water. Allow to cook for 8 to 30 hours adding water if nec. you can you creamed soups instead or in addition to. Ground beef is always cheap or a nice big chucksteak. Your only limit is your tatse and imagination. beans are fantastic, frozen vegetable blends are quick and easy.

1 package dry gravy mix (makes 1 cup)
1 pounds red potatoes, cut into bite size
1 Tablespoon dried minced onions
Cook on low heat 2 hours, pour on 1 cup milk, cook another 10 minutes, serve. It was great!

You can cook about anything in a crock pot than you could in an oven. Here are lots of recipes for example:

http://www.crockpot.com/recipescat.aspx?catid=1

My favorite that I did just yesterday was the old beef roast. SIMPLE
Just salt & heavy pepper it (cut it in 2 or 3 pieces if it's to big). Rub some flour on it. Brown all sides in a heavy pan or skillet on medium. Remove, now put a heaping Tablespoon of flour in the skillet with the oil and drippings. Brown it a little, add a can of cream of mushroom soup, stir that up, add 1 envelpoe of onion soup mix stir and heat, remove. Put the roast back in smear that on all sides. Cut up a large onion put 1/2 in the bottom of the crock pot, put the roast in, put the rest of the onion on top. Pour the rest of the gravy over it. DO NOT ADD WATER!!!
Cover cook on high till it gets hot then on low about 5 hrs. ( it can go longer maybe while you are at work) Cook a pot of rice or mashed pototoes for all that gravy!!!
You can also salt & pepper a whole chicken, stick an onion inside put onion of the bottom and throw the chicken in there. Cook it about 3 hrs. Don't add water if you want it roasted, or add water if you want a broth for noodles or dumplings. Good Luck.

If your chef is not that bright, I suggest basic recipes like toast or cold cereal.

REVISION: Oh. By "slow cooker" you meant something akin to a CROCK POT. Now I understand. How ironic!

Try chili (beans, diced onions, peppers, tomatoes, lean steak chunks, tomato sauce). Everything should break down into a nice, hearty stew by the end of the work day.
