This is a good white chili recipe with chicken, not beef.
3 16oz. cans Great Northern White Beans
4-5 cups chopped cooked chicken breasts or pheasant breasts
1 Tbls. olive oil
2 onions, chopped
4 garlic cloves, minced
2 4oz. cans chopped green chilis
2 tsp. ground cumin
1 1/2 tsp. oregano leaves
1/4 tsp. cayenne pepper
6 cups chicken broth
3 cups Monteray Jack Cheese
Boil the breasts in water about 20 minutes or until done. drain and cool.
Heat oil in kettle over medium heat. Add onions and cook til translucent (10 minutes). Stir in garlic, chilis, cumin, oregano, cayenne pepper and cook a few more minutes being careful not to brown the garlic.
Add undrained beans, broth, and breast meat. Bring to a boil. Reduce heat and add cheese to the chili. Stir until cheese melts.
Serve with more cheese and sour cream!

Scotch Bonnet Chilli I love, adore and need the addictive burning that only a Chilli pepper can produce. I have finally hit upon my favourite recipe, please bear in mind this is for serious aficionados only. Ingredients: 500 gr Minced/Ground Beef 10 to 15 Fresh Scotch Bonnet/Habenero Chillies 6 Tablespoons of Hot Chilli powder 2 Cans of Premium chopped Tomatoes 1 Can Red Kidney Beans 4 Tablespoons Tomato Ketchup (adds sugar) 2 Good sized Onions 1 chopped, 1 Finely sliced 6 Cloves of Garlic roughly chopped and crushed 1 teaspoon Cumin powder 1 Pint Water Oil Butter Salt and Pepper to taste Soured Cream Grated Cheddar/Parmesan Cheese Method: In a large pan, warm enough oil to cover the base. Add Chilli powder and stir for 2 minutes, add onions and finely chopped chillies, stir for 4 minutes until soft and onions begin to colour, add garlic, Cumin and Beef. Continue to cook on a low heat for 10 minutes. Add the Tomatoes and drained Kidney Beans, gently simmer for 60 minutes adding water to desired thickness. Add a knob of butter and season to taste. Simple but very effective, if you like it HOT! Sprinkle with large amounts of the Cheese.

Here's a simple chili recipe for you it only takes about 20 minutes to cook:
1# ground beef
1 packet hormel chili seasoning
1 small jar of Ragu Meat flavored spaghetti sauce
1 can of light red kidney beans
1 small bell pepper
Brown the beef and add the pepper and chili seasoning, cook for about five minutes then add the sauce and the beans and bring to a boil for about two minutes. Then serve. If you like it spicy, then you can use two packets of chili seasoning, or you can just add some chili powder.

Real "chili," which is a corruption of "chile con carne" (meaning peppers with meat) is made of good red peppers simmered with meat (beef or pork usually, although goat or lamb is acceptable but not chicken or fish), onions, garlic, cumin and sometimes oregano. Tomato paste is optional but non-traditional and controversial. Do an internet search for it, but ignore any recipe that has beans in it. Real chile con carne never, ever, contains beans; if it did, it would be called chile con frijoles (beans). And, unless you live in California, there is no such thing as "white chili" or "swordfish chili" or any other such nonsense.

Keep it simple. I would give you my recipe but it changes every time I make the stuff. Three secret ingredients you can add just a touch of to keep people guessing: cinnamon, instant coffee granules, cocoa powder. Add one or all three in tiny increments until you get it right. Never enough so anyone can guess.
Ground beef
tomato sauce
onions
green bell pepper
chili powder
garlic
celery salt
touch of cayenne
lots of comino (cumin)
NO BEER OR BEANS. Beans were meant for rice and beer for drankin' while stirring! :)
Simmer all day or night in a slow cooker.
Good luck!

LOTS-O-Chili powder, onions, green (or whatever) peppers,
Beans (or not) Lots-O-cookin'. Add whatever ....
That's how we did it on the trail out west. Easy-n-yummy.
