I just made tilapia the other night like this. I actually rolled the fillet in ranch dressing and then put it in a mixture of bread crumbs (I used Panko but you can use whatever you have, Progresso are the best for me), garlic, salt, pepper, parsley and you can even put some Parmesean Reggiano which would give it a nice flavor. I baked at 400 until brown and crunchy. It was really good. I hope this helps.

The standard breading procedure:
-beat 2 eggs, and add 2tsp of water and place in a bowl, and set aside.
- place flour in another bowl, and set aside.
-place bread crumbs in another bowl and set aside.
(don't have bread crumbs availalbe? Take two sliced of bread of your choice and place in the oven and toast til dry at 250 (low temp to allow bread to dry out, before it begins to color). Take out, let it cool and crumb with your hands and mix in some dried herb, spices of your choice)
now dip your fish into the flour, then into the egg, then back into the flour and then into the breadcrumb mixture. You are done!

First dip the fillets in flour, then in an egg and milk mixture, then with a mixture of flour, cracker crumbs and spices. Refrigerate for up to an hour and fry until they float. Good!

You can use Drakes it has a white duck on it or you can use flour water and any desired spices. I like to use Mrs. dash seasoning on plain fish then broil for 20 mins.

what kind of fish are u cooking? should it be battered or fried, poached or steamed? I wouldn't even try to answer this question w/o knowing what fish you are cooking but good luck, looks like most just want you to slap it in a pan with oil.
