Chop up some herbs, mix with whole grain or reg mustard and a lil honey. Spread all around on the lamb's flesh. Place the lamb in a baking dish. Cover with aluminum and bakk at 350 for 10 mins. Uncover and broil from 3-4 mins on each side. You would like the middle to be medium-rare (a lilttle pink and moist in the middle). Remove from oven and allow to cool for 5 mins and serve. It will have a sweet and spicy flavor. i suggest when you are mixing the mustard and honey, taste it and mix to your liking.

grilling is the only way to make those chops taste right! Marinate is best but if you only have time to brush with olive oil, rosemary, garlic, salt and pepper and some lemon juice(only fresh lemon juice my friend).....Oh so good. Marinating in this mixture is really better even for a couple hours. Grill over direct medium heat 9-11 min for medium rare. Serve with a nice brown rice....get some Greek style cheese yogurt(1 cup) and mix some minced fresh garlic, a squeeze of 1/2 lemon and some salt. Do a little dip of the lamb in the yogurt....so good. This is one of my favorite dishes. Enjoy!!!

Broiling them is fast and you just have to keep a close eye on them so you don't overcook. Also grilling them on the Barb-B too is a great way to cook any kind of chops.

Chipotle Honey-Glazed Lamb Chops:
3 or 4 dried or canned chipotle chilies
3 tablespoons honey
8 lamb rib chops (each about 3/4 in. thick; 2 lb. total)
Salt and pepper
Lime wedges
1. If chilies are dried, soak in about 1 cup hot water until soft, about 15 minutes. Wearing rubber gloves, remove chili stems and, for minimum heat, discard seeds and veins. Finely chop chilies and mix with honey.
2. Trim excess fat off lamb.
3. Lay chops on a grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook chops until lightly browned on each side and still pink in the center (cut to test), turning once, 5 to 6 minutes total.
4. Brush tops of chops with honey mixture, turn over, and cook until glazed sides darken slightly, about 30 seconds (watch closely; honey glaze burns easily). Brush tops with remaining honey mixture, turn glazed sides down, and cook just until slightly darkened, another 30 seconds. Transfer meat to plates. Season to taste with salt, pepper, and lime juice squeezed from wedges.
Yield: Makes 3 or 4 servings

Season very well with: kosher salt, coarse fresh ground pepper, minced garlic, rosemary and olive oil then in a lightly oiled pan, very hot, seared the chops on both sides until brown then out them for a couple more minutes in a 375* oven until medium rare/medium...
Also you can season the same way and grill them over medium hot grill. or just broiled them directly on the oven. Also you can braise them with potatoes, onions, mushrooms and carrots in a 325*-350* temp. oven until medium rare and the veggies are fork tender.

We do them very simple in my house. Either fry them or broil them, with just a bit of salt and pepper, until the juices run clear when poked with a fork.

Fry them in a pan with butter and season them with garlic powder, onion powder, seasoning salt and pepper. The flavor from the seasoning and the butter is delicious.
