I want to garnish a key lime pie with quarter slices of lime which have been crsytallized, but I'm not sure how to do it?

the absolute easiest way is to coat the fruit in egg whites and bury them in sugar overnight.
candying fruit is a time consuming process. you have to blanch the fruit a couple of times to remove bitterness from the pith, then submerge them in increasingly more saturated sugar solutions and let them sit for 24 hours each time. it takes about 3 or 4 days.

a quick candy -melt 1-cup-sugar with 1-tablespoon water heat to 450-500 degrees ,dip the lime slices ,powder with sugar and dry on rack

other than this the candie process takes 7-steps and a good 3-4 day's to complete so if your not making a ton of the stuff your better of using this or just buying a bag from the store !

boil sugar and water and when the sugar is melted drop in the fruit then let it dry.
