Cream of Cabbage Soup
1 cabbage, cored and chopped
1/2 cup sliced celery
1/4 cup chopped onion
2 cups chicken broth
1 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup butter
1/3 cup all-purpose flour
4 cups milk
Combine coarsely chopped cabbage, sliced celery, chopped onion, chicken broth, salt and pepper in a large kettle. Heat to boiling, then reduce heat and simmer for 15 minutes. Set aside.
In a large saucepan, melt butter then stir in flour. Gradually stir in milk and cook over medium heat stirring constantly until thick. Add to the cabbage mixture and stir together. Serve hot.
Makes 8 servings.

Cream of Cabbage Soup

4 to 6 C. water
6 to 7 slices bacon, fried crisp, drained and crumbled
2 (10 oz.) cans cream of chicken soup
2 C. whole milk
About 1/2 C. instant potato flakes or 1 - 1/2 C. leftover mashed potatoes
Salt and pepper, to taste
Finely chop the cabbage, onion and carrot in a food processor.
Put mixture in a large saucepan and add water. Cover and cook until vegetables are tender. Do not drain.
Add crumbled bacon, cream of chicken soup and milk. Stir well and heat. Add potato flakes, salt and pepper. Cover and simmer until thickened.
Serves 10 - 12.

CREAM OF CABBAGE SOUP
10 c. coarsely cut cabbage (2 1/2 lb.)

1/2 tsp. caraway seeds
1/4 tsp. red pepper
Simmer 10 minutes. In another large pot make white sauce with: 1/3 c. flour 4 c. milk
Cook over medium heat until boiling. Combine two mixtures. Heat to serving temperature.

chop cabbageand 1 onion.sautee in a little until translucent and then boil in chicken stock with onion salt and white pepperuntil tender....just cover cabbage 1/2 way with stock......stir frequently when tender...take all and put in a blender and blend..be careful only fill blender 1/2 way as you are using hot soup...now take 2 qts of this liquid and place back on stove stir in a pint of half and half...seson if needed...serve imediately garnish with a spoon of sour creamand some shredded carrots

boil cabbage slowly, with just enough water to cover, until it begins to fall apart. Let cool awhile, season to taste (salt & garlic & pepper) add cream (about one cup, but depends how much cabbage you made.) Use heavy whipping cream if possible, otherwise half & half will do. Bon appetit, or shalll we say GUTE ESSEN!
