SOFT-CHEWY CHOCOLATE CHIP COOKIES
1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
2 1/2 c. oatmeal (powdered in blender)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
2 c. flour
1 pkg. chocolate chips (semi-sweet)
1 1/2 c. nuts (optional)
Preheat oven to 400 degrees. Cream butter and sugars. Blend in eggs; add oatmeal. Mix dry ingredients. Mix will be very stiff. Mix in chips and nuts. Put 2 inches apart on ungreased cookie sheet. Bake 9 minutes - no more!

1. MELT the butter in the recipes, don't beat it--something about the way that melted butter binds with flour helps keep cookies chewy.
2. Add an extra egg yolk to the recipe.
3. And of course, make sure to under bake the cookies (and remember that they will bake an extra few minutes on the sheet after you take them from the oven, so they can look pretty underdone when you take them out).

The best chocolate chip cookie ...the good old Nestle Toll House recipe. The trick is......don't over cook. Cut cooking time by a minute or two. This is how I make mine and they stay soft!!! Happy baking!

Soft Chocolate Chip Cookies
•4 1/2 cups all-purpose flour
•2 teaspoons baking soda
•2 cups butter, softened
•1 1/2 cups packed brown sugar
•1/2 cup white sugar
•2 (3.4 ounce) packages instant vanilla pudding mix
•4 eggs
•2 teaspoons vanilla extract
•4 cups semisweet chocolate chips
•2 cups chopped walnuts (optional)

DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

use a mix of brown a normal sugar and use Crisco shortening cuz it gives u the taste of butter with the softness of shortening.
