You would have to break of the tail while it's still alive and then freeze the tail. Mind you the animal is still alive and moving while you are cutting or ripping off it's tail.

You can also partially cook the lobster and then freeze the tail, legs and claws. Don't fully cook the lobster or the meat will get tough when you reheat it.

In case you didn't know you can buy the tails already frozen. A lot less work that way.

If you want to taste the freshness out of the lobster, don't freeze. Steaming fresh keeps the flavor of the lobster. Freezing won't have a fresh taste.

If you like to eat the lobster cold, cook the lobster than put in the fridge (not the freezer) until the lobster is cold. Make a cold dish out of it.

Absolutely not!!! You will destroy the complex flavors that make lobster so enjoyable. Put it in the pot live. Some dishes require a dead lobster, but this can be done without freezing. Just place the knife between the two dorsal plates and plunge.

unless your using the tail only, the whole live lobster goes right into the boiling water, steam bath, or grill.

Not if it's alive! That would be MEAN! Start it in cold water and slowly bring to a boil. It never knows what happened, just like a frog.
