Well red, of course. It was the best wine to be had that day, there where no refrigerators and nowhere does it say "and then he chilled the wine".
Why would Jesus turn water into lukewarm white wine? Would you? No, you'd either turn it into lovely chilled crisp white (and the temperature would have been mentioned) or you'd turn it into a nice chambred red.

Most likely red. The water they had back then was probably too cloudy to make real white wine with anyways.
