you can get venison chops at the St. Lawrence market. Try Whitehouse meats, or Witteveen.
You can only legally by farm-raised venison, by the way. Wild game can not be bought or sold commercially, so if you want the wild thing, you need to get it yourself or buy it illegally. (A friend of mine says the best place to try to buy the wild stuff is if you know someone on a reserve, but I wouldn't know where to start, even if it's true.)
