if you were serving lunch for training staff..

Chicken, peppers, mushrooms in a cream or chesse sauce. Don't overdo it.

Tortilla Omelet Wrap




2 eggs
1 tablespoon half-and-half
salt and pepper
1 (10 inch) flour tortillas
1/2 tablespoon butter
1/3 cup monterey jack cheese, grated
1/3 cup cooked ham, diced
1 tablespoon red bell peppers, diced
1 tablespoon onions, diced
2 teaspoons jalapenos, seeded and diced


Whip eggs, half and half, salt and pepper to taste.
Warm tortilla in skillet and set aside.
Melt butter in a 10" non-stick skillet that has been coated with cooking spray and heat until bubbly.
Pour in egg mixture and pull eggs toward the center from all sides.
Remove from heat when the eggs are still moist, but no longer run.
Top with remaining ingredients, being sure to sprinkle over entire omelet.
Slide omelet onto the warmed tortilla and roll up bottom edge, then fold in sides about 1" and continue rolling until completely rolled.
Lay in plate seam side down.
Let rest for a couple of minutes and cut in half.
Serve with favorite salsa or relish.

this is going to sound strange but it's actually tasty. Try some cream cheese (or something similar with a hint of sweet) and fresh sliced strawberries,or any berry, with a drizzle of honey on the tortilla after its wrapped up..mmmmmm..serve with a mint garnish and a few scattered berries and drizzle a little more honey for presentation. Honey can be substituted with chocolate sauce if it's a desert rather than a breakfast type food.(similar to a blintz)

As a sweet one you could spread with chocolate spread add slices soft fruit (strawberrys, peach, banana) then roll, even better if you can get to a microwave

fried mushroooms, done with garlic salt excellent hot or cold
just serve with some greens mmmmmmmm

salad, garlic dip and salsa, spread on tortilla and then add shredded chicken and thinly sliced onions.

minced beef, as you would serve in spag. bol. herbs and spices added. also add a few nachos, all very nice, easy and tasty!
