strawberry cheesecake with graham cracker crust - NY Style (really thick)

My favorite cheese cake is one that I make myself.

Make a graham cracker crust with about 1 1/2 cups graham cracker crumbs, 1/4 cups sugar and 4tbsp melted butter. Mix it all together and press into bottom and sides of spring form pan. Place pan into preheated oven (350 degrees).

Mix together 4 8 oz packages of cream cheese
1 cup sugar
4 eggs
1Tbsp vanilla

Pour into graham cracker crust and return to oven and bake for approx 1 hour. Cheese cake is done when the center just slightly jiggles when shaken.

Other hints.
* sometimes while baking, the top of the cheese cake will crack. If this is a concern, place pan of boiling water on shelf under cheesecake while baking.

* If you desire other flavors of cheesecake, try one of these:

Stir in 1 cup of chocolate chips
stir in 1 cup of any fresh or frozen fruit (May desire to add a little extra sugar)

*omit vanilla and add 2Tbsp of key lime juice.

In the fall, add chopped pecans and a little cinnamon to the crust.
add 2 tsp cinnamon to batter and top with sliced apples and pecan pieces that you have tossed in cinnamon-sugar before baking. This may need to bake a little longer and when done, a knife will come out from center of cheese cake clean.

My favorite cheesecake is called "Chocolate Coconut Cream", topped with whip cream, garnished with chocolate sauce & coconut flakes.

It's like the marriage of an almond joy & cheesecake.
It has chocolate, coconut, and macadamia nuts.
If you like coconut & almonds covered in milk chocolate and cheesecake you are sure to like my favorite cheesecake.

Ultimate Strawberry Cheesecake
Servings: 12

1-1/4 c Graham Cracker crumbs (fine)
1 lb Cottage Cheese, small curd
16 oz Softened Cream Cheese
1-1/2 c Sugar
4 Eggs
1/2 c Cornstarch
2 T Lemon juice
1/2 c Margarine or butter
1 pt Dairy Sour cream

STRAWBERRY GLAZE
1 T Cornstarch
1/4 c Water
1/3 c Light Corn Syrup
1/4 c Crushed Strawberries
1 t Lemon juice
1 dash Red food coloring (if desired)

Preheat the oven to 325ºF

Grease 9" springform pan; sprinkle with graham cracker crumbs, tilting pan to coat the sides. Into a large bowl, mash cottage cheese through sieve; add cream cheese. Beat on high setting with electric mixer until well blended. Beat in sugar, then 2 eggs.

Reduce speed to slow. Beat in cornstarch, lemon juice and vanilla, then margarine or butter and sour cream until smooth. Pour into prepared pan. Bake for 70 minutes or until firm around the edge.

Turn oven off. Let cake stand in oven for 2 hours. Take out and chill. Remove side of pan. If desired, cover with Strawberry glaze. Freezes well.

STRAWBERRY GLAZE
Mix cornstarch, water and light corn syrup until smooth. Add strawberries. Bring to a boil for 1 minute. Strain. Stir in lemon juice and, if desired, a drop of red food coloring. Cool slightly, then cover top with glaze.

Why? It's just sooo delicious, you should try it!

The best cheesecake Ive ever had was my momma's!!!
Yummmm!!!!
It was a old world recipe.... cream cheese, riccotta, etc... baked!
You had to let it cool in the oven.
Nothing needed to top it as it was delish all by its self!!!

I do love baked chocolate cheesecake too!!!

Those are my two top favorites, but I must admit I will eat all cheesecakes!!!! lol!!! I love em!!!

New York Style cheescake with the Oreo crust with fresh strawberries.....because it's less dense than other cheesecakes, the oreo crust kicks up the flavor and the strawberries add some freshness.
