Upside-Down Plum Cake

(Serves 6 to 8)

1/3 cup butter
1/3 cup granulated white sugar
1 large egg
1 teaspoon vanilla
1 cup pastry flour
1/2 cup light cream
2 large egg whites, beaten stiff
1/4 cup brown sugar
2 cups sliced, peeled plums*
extra white sugar

Preheat oven to 350 degrees F or 180 degrees C. Generously butter 9-inch cake pan; set aside

Place butter, granulated sugar, whole egg and vanilla in large bowl. Using electric hand mixer, beat 2 minutes or till thick.

Sift flour and baking powder. Using a spoon, mix half of flour into egg mixture.

Pour in cream and mix well. Add remaining flour and mix again.

Fold in beaten egg whites till no trace remains. Set batter aside.

Sprinkle brown sugar over bottom of prepared, buttered and floured pan. Cover with plums in circle pattern. Sprinkle more sugar over them along with dots of melted butter.

Pour in batter and bake 1 hour in middle of oven, till a knife comes up clean.

When done, remove cake from oven and let cool in pan. Turn out onto an ovenproof serving platter and sprinkle with sugar. Place in oven, 6 inches from broiler element and broil for three to four minutes. Slice and serve with vanilla ice cream.

*Blanch them a little over a minute in hot water, then let cool and peel off.

1 serving without ice cream has 290 calories and twelve grams of fat. To cut down on fat, use half-apple sauce and half-butter.

There are many recipes for plum cake, you can find them in lots of cake books or even in cooking books. Look them up in your library or on the Internet.

Most people modify the recipe to give it a personal touch.

Simplest would be to buy any ready cake mix that you like say "vanilla cake" follow the method on the box while mixing add fresh plums or dry plums, they could be chopped or whole.

Variation to this, will be upside down or down side up.

Upside Down.

All the plum is put at the bottom of the pan and batter is poured on top. pan is flipped over to take the cake out.

Down side up.

Batter is poured first then plum is spread/Left on the top.

In both cases plums are at the top while serving. However the flavour is different.

INGREDIANTES:-
1 3/4 cups all-purpose flour
1/4 cup sugar
1/2 cup butter, cold
3 eggs
1/2 cup walnuts
8 medium plums, halved
1/4 cup sour cream
1 tablespoon sugar
METHOD:-
Mix flour and sugar, and cut in butter with a pastry blender.
Add one egg, and stir with a fork until blended.
Pat into a 9" quiche pan and sprinkle with chopped nuts.
Place halved plums on top.
Beat together two eggs, sour cream and sugar.
Pour filling over plums.
Bake at 350 for 1-1/4 hours, then brown at 375 for 10 minutes.

PLUM CAKE
100 g sugar
100 g butter
125 g flour
2 eggs
1/2 teaspoon baking powder
plum chopped
vanilla essence

Mix sugar and butter cream well. Add eggs 1 by 1. beat well then add sieved flour and baking . mix well add plum n vanilla essence. mix again and pour in a tin bake in oven 200 c for 20 -25 min. check by picking a knife if it comes out clean then switch off oven. serve warm with a cup of coffee
