Living under your parent's roof means you pretty much have to follow the rules. But at 18 years of age, you are entitled to make your own decisions.
My advice would be to try to talk with your mother about your beliefs. Assure her that even though you don't share the same faith, you are the same person she raised to have morals and values.
And then I would start doing everything I could to have my own place.

Until you can pay all your share of the bills (Give unto Ceasar what is Ceasars) you have to do chores and that's one of them.
The only way you can get out of it is if the chores are dangerous or harmful to the body. If you parents are sadists or massochists they can't force you to go to bondage sessions and get beaten. That's illegal.
Bilogy and evolution does not disprove religion. Little can.
I've been through this with people before. Take us for a trip in your time machine and PROVE in reality there was no Mary, Joseph or Jesus or Moses or Noah.
Bring us a space alien picture history books going back in time showing how we progressed and what the first men were and have them attest they knew of no Noah, Moses or Jesus.
Then you have something going for you.
Jews and Catholics have no problem with Darwin a SOFT SCIENCE theory based on randomist beliefs.
Randomism means that if you put BILOGICAL CHEMICALS into a test tube you have a 1 in ten trillion chance of producing an amoba from aminio acids.
Bilogy, on the other hand, is a harder science and you can PROVE repeated that that GRAM NEGATIVE antibiots do, indeed, kill given species of bactrium. You can do this on a REPEATED basis.
It is NOT random. Well, at least the odds are more in YOUR favor that in one out of 10,000 tries something may go wrong, but 99.9% of the time Tetracycline will kill the bugs.
You don't have that kind of odds with evolution!

Now, dress up go to Church and be prepaired for the day when the most foxy, delicious, delightful, sexy, fantanstic GIRL comes into your life and finds you AMAZING and considers possibly marrying you and she's a Catholic or Baptist or PEntacostal or Methodist and YOU will have to go to church forever to get into her bed, but she's far better than anything else you've ever seen.

Being a Biology student doesn't make you a non-believer.
If your 18 you are old enough to explain to your mother that you dint believe, and that forcing you into church is against the religious belief itself.
As you get older you may become spiritual I didn't.

Start your own religion and become a High Priest. Then, start recruiting some followers from your local area.
Another option: go to church, but pray loudly to Baal or bring a carved idol of a wooden god.

Get up early before she does and go somewhere and just hang out until after she leaves for church... then come home and sleep. Go to B&N, get a coffee, read some books that aren't full of lies and contradictions and have a good sunday morning.
If she decides to argue about it she will be forced to do so after church. This is good for both of you. You will get out of going, and she won't go to church all angry.

You think that being a student of biology explains why you believe God doesn't exist? It doesn't explain anything to me. I know evolution is a fact but that has no relevance to any views I might have about God.

First, make sure you're not going to be coming back there to crash again. I can tell you from personal experience that if you put your foot down, there are two things that will happen.
One either she will accept it
Two she will throw you out and cut you off.
Think about what you're willing to do. Even if you are independent of her, if she cuts you out of her life, that emptiness will fill with bitterness and hate.

Well, not that I feel that anyone should be forced to go to church, but unfortunately you live at home and feel that you can't live on your own, so therefore you really have to abide by your parents rules, unless you can nicely convince them that this isn't for you.

you are 18, old enough to make your own decisions, tell your mom you are not a child anymore and she cannot make you go to church. stay home or go out when she is ready to leave for church.
