I start with a can of humus, available in most grocery stores. I don't have a real "recipe" but I do add minced garlic, lemon juice, and olive oil to both thin the humus (from a can, it's just too thick) and add flavor. If you can't find canned humus, substitute a can of chickpeas which you can mash or put through a food processor.

Yep:

Chickpeas in a can - with the juice
Lemon juice
Tahini
Flat Leaf Parsley
Extra Virgin Olive Oil

Blend together. You adjust the ingredients to the desired consistency. Some more modern recipes are adding yogurt to the mix, but that's not authentic.

I also like to take Whole wheat pita pockets, cut them into wedges, spray with olive oil, and broil them for a couple of minutes until they are crispy. Tastes so good dipped in the hummus.

Hummus is also an awesome source of protein. There are 15 grams of protein in one medium can of beans and in 2 tbsp of tahini there are 7 grams of protein. Excellent for vegetarians.

2 tablespoons tahini (sesame paste)
1 (15 ounce) can chickpeas
1/2 teaspoon ground coriander
2 teaspoons minced garlic
1 tablespoon lemon juice
1 dash hot sauce (optional)
salt and pepper

very easy, very tasty!

blend and season to taste

There is a super excellent one on epicurious.com. After you make it, you float a little parsley oil on top of the bowl (comes with the recipe). My family was astonished!

I just served it with tortilla chips, but pita chips would of course be more authentic. My family raved!
