I can only speak of NZ. Where do you start? If you have kids, then a Buzzy Bee, Lambskin Blanket. How about some Maori art? Its a pity they wont be able to bring you back the experience of visiting a vibrant place like New Zealand.

You really need some Tim Tams (cookies) from Australia and some Moro candy bars from NZ. That is what I make my sister bring me when she comes home from there...she lives in Sydney.

Stereotypical things - toy kiwi from NZ, toy kangaroo/ koala/ wombat/ etc from Australia.
Boomerang, didgeridoo, indigenous art, t-shirts, novelty signs, keyring.... I'm just thinking about what I see whenever I go past those tacky overpriced tourist shops.
I would personally like nice jewelery made from native stones.
