I guess it would depend on what else you have in the house. I know that personally I look at left overs to make omlette stuffings. If i have left over chicken, I slice it thin or do small cubes, start some onions and green peppers until they begin to sweat and then add the chicken. Salt and pepper to taste and heat through the chicken, remove it from the pan, start your egg, put in the fillings when the egg is ready, and top it with some cheese. fold and serve.
Other times it has been leftover smoked sausages, steak, I have even used deli sliced baked ham and swiss cheese. Look for any leftovers and add some basic ingredients and stuff away! lol!
Ooh a recent favorite has been chopped up sundried tomatoes cooked into the egg with banana peppers. Heat through the tomato pieces and banana pepper slices then dump the egg on top, mix around a bit then I stuff it with one of those new cheese blends, It something with roasted garlic from Sargento. It is delicious, of course other things can go in the fold other than cheese but, mmm, it is good!
Just have fun and experiment. My parents often don't even bother to stuff their omlettes they just coolk the ingredients into the egg and top it with cheese afterwards.
I hope this gives you some ideas!

baked beans on toast is super.
Just heat a tin of baked beans (whatever your favorite brand).
Spoon onto toasted bread
The Brits top with 'brown sauce' (A1 Sauce or other type of streak sauce, HP brand steak sauce is really good) and sometimes a poached egg. It's full of protein, and while maybe an acquired taste, it's really very good.
You could also try Welsh Rarebit:
WELSH RAREBIT
4 oz. Cheddar cheese, grated
1 oz. butter
Hot buttered toast
2 tbsp. milk (or bitter ale, optional)
1 tsp. made mustard
Seasoning to taste
Heat the butter in a saucepan. Add the milk (or ale), mustard, cheese and seasoning. Stir until the cheese has melted. Pour onto hot buttered toast and serve quickly. If liked, it may be browned under the griller.
Then of course their is the old reliable grilled ham and cheese, you could add egg to make it more interesting or tomatoes.
Any of these are great with a small salad on the side and maybe a glass of wine...
All are relatively inexpensive and easy to do...and you might already have the ingredients in the pantry....
Have fun!

get a jar of spaghetti sauce, a tube of sausage (i like spice kind), and a box of spaghetti. boil the spaghetti with a little butter in the water to stop it from sticking together. brown the sausage. drain sausage then ad sauce. heat that drain noodles and make a plate. its good stuff and you can make garlic toast in the toaster just sprinkle a little garlic powder on your buttered toast.
its not hard and it's Delicious

Two slices of buttered toast. Add slices of cheese. Put into oven for a couple of minutes for the cheese to melt. With the back of a spoon make a hollow in the centre of the cheese on each slice. Fry two eggs. One each on each slice of toast. If you have a little Worchestershire Sauce add a couple of dashes otherwise a little Ketchup............... lovely.........
