i'm home alone and got ntg for dinner....i wanted to make an omlette but i want something different? any ideas? something easy fo a beginner such as myself?:p

Homemade mac and cheese. (My Moms recipe). Just remember 4, 4 and 2. 4 tbsps. butter, 4 tbsps. flour and 2 cups of milk., melt all of of that together with a lb. of extra sharp cheese. Boil your elbows , combine. bake in 350 degree oven for an hour covered and then 20 min. uncovered if you like a little crisp. Enjoy. It's wonderful mac and cheese...Don't forget S&P and paprika if you're serving guests. Other than that, corn bread and beets or corn make good sides..

Bacon, Mushroom, and Cheese Omelet
Serves 1

3/4 Cup Eggbeaters
1-1/2 Tbsp Unsalted Butter
3 Strips Crisply Fried Bacon
1 (4 oz can) Sliced Mushrooms, drained
1/4 Cup Mozzarella Cheese, grated
1 Scallion, sliced thin, for garnish

Instructions:
In a large nonstick frying pan melt the butter over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute.

Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

One-Dish Macaroni And Cheese With Sausage
Yield: 4 Servings

Ingredients

9 oz pkg frozen broccoli
1 lb macaroni and cheese, cooked
- from b; ox, deli, or froze
1/2 lb polish sausage, cut in 1/2
-inch pi; eces
1 tb margarine or butter
1/4 c buttery crackers, crushed

Instructions

1. Preheat oven to 350 degrees; if needed, prepare macaroni and cheese as
directed on package.

2. Cook broccoli as directed on package; drain.

3. Combine broccoli, macaroni and cheese, and sausage in 1 1/2-quart
casserole.

4. In small pot, melt margarine over low heat and stir in crushed
crackers.

5. Sprinkle cracker mixture over top of casserole; bake at 350 degrees for
20-30 minutes or until thoroughly heated.

Make chicken salad, I make a big bowl of it everytime my husband goes out of town and that's what I eat while he's gone. Boil some chicken until it's done all the way through (it should be white) then add it to the food processor with some sweet relish and pecans with some salt and pepper, it's great on bread or on crackers. Salsa is really good to, make your own with a couple of cans of tom. 1 can rotel, some cilantro and lime juice ( you can add onion to) chop it all up in the food processor and there you go!!! They are both good snacky foods.

I used to work as a front-line cook at a deli. Omelettes were very high in demand, and very tasty!

For one omelette, I would cut up onion and green pepper, the saute them with basil, oregano and thyme. then set them in a bowl to mix with some diced tomatoes. Then I would slice some cheese (usually cheddar) and start on the egg part. Once the egg part was cooked about halfway through, I would add the onion-tomato mixture and the cheese, and fold the eggs over and let it finish cooking.

Yum!

thaw a chicken breast and bake for 20 min in a greased dish. @400 . Pour a can of cream of mushroom soup over top and sprinkle w/ cheese. bake another 20min. very good very easy. add a veggie and your set.

add cheese and ham to the egg
if you have onion and green pepper, add that too
then when it's done put more cheese on top and then some salsa
