Chinese Cabbage Slaw

Sauté and cool:
2 packages plain Ramen Noodles (break in pkg before opening)
/4 to 1/2 Sesame Seeds
2 1/2 ounce sliced Almonds
1/2 cup Margarine

1 large head Chinese Cabbage (finely chopped)
5 to 10 Green Onions (chopped)


Dressing (blend ahead of time):
1/2 cup Salad Oil
2 tsp Soy Sauce
1/2 cup Sugar
1/4 cup Vinegar

Put dressing on salad 20 to 30 minutes before serving. May be made ahead of time (early morning).


Corn Relish Salad

1/3 cup Sugar
1/3 cup Vinegar
1/4 cup Vegetable Oil
1 can Whole Kernel Corn
8 oz. Colby-Jack Cheese in 1/2-in cubes
1 med. Tomato, chopped
1/4 cup chopped Green Bell Pepper
1/4 cup chopped Onion
1/2 cup chopped Celery
1/4 tsp. Salt

Stir sugar, vinegar and oil together. Combine remaining ingredients and pour vinegar mixture over and mix thoroughly. Cover and refrigerate at least 4 hours or overnight. Stir before serving.



Cornbread Salad

16 ounces Cornbread Muffin Mix (cooked as directed)
3 cups diced fresh Tomatoes
1 cup diced sweet Red Onion
1 cup diced Green Pepper
1 or 2 ribs diced Celery
1 pound Bacon cooked and crumbled
1 pkg cooked Ham, chopped (optional)
1/4 cup Sweet Pickle Relish
1 cup Mayonnaise
1/4 cup Sweet Pickle Juice
Shredded Parmesan Cheese

Place cornbread cubes or crumbles in a large salad bowl. Combine tomatoes, onion, green pepper, bacon and relish; add to cornbread. Combine mayonnaise and pickle juice; mix well. Pour over vegetables and cornbread. Toss gently. Sprinkle with cheese. Chill until ready to serve. Serves: 10 to 12


English Pea-Macaroni Salad

1 6-7 oz. Elbow Macaroni
1 can English Peas
1/4 cup Onion, chopped
1/2 cup Salad Pickles
1/2 cup Mayonnaise
Salt and Pepper to taste
3 boiled Eggs

Cook macaroni, and rinse to cool. Combine macaroni, English peas, pickles, onion and mayonnaise. Gently stir in 2 eggs, that have been chopped up. Slice the third egg and lay on top of salad. Sprinkle Paprika on top. Chill.


Marinated Salad

1 can English Peas, drained
1 can Shoe peg Corn, drained
1 2-oz Pimento, drained and chopped
1 cup Celery, chopped fine
3/4 cup sweet Onion, chopped fine
1 tsp. Salt
3/4 cup White Vinegar
Pepper to taste
1 tbs. Water
3/4 cup Sugar

In saucepan, combine salt, vinegar, pepper, water and sugar until sugar is dissolved. Cool and pour over vegetables. Refrigerate overnight.


Pretzel Salad

2 cups crushed Pretzels
3 tbs Sugar
1 sticks Margarine, melted

Mix and pat in 9X13 pan. Bake at 350 degrees for 10 minutes and let cool.

8 oz. Cream Cheese
1 lg. Cool Whip
3 cup Sugar

Combine and spread over cooled pretzel mixture.

1 lg Strawberry Jell-O
2 cups boiling Water
1/2 cup cold Water
1 pkg. Frozen Strawberries

Dissolve Jell-O in hot water, stir till dissolved. Add cold water and strawberries. Let congeal a little before pouring over cream cheese mixture. Thoroughly chill before serving.



Seven Cup Salad

1 cup grated Coconut
1 cup crushed Pineapple
1 cup Cottage Cheese
1 cup Fruit Cocktail, drained
1 cup Sour Cream
1 cup miniature Marshmallows
1 cup chopped, toasted Pecans

Combine all ingredients and refrigerate until ready to serve. Flavor improves in the refrigerator.


Macaroni-Tuna Salad

1 6-oz pkg Shell Macaroni
1 cup cubed Cheddar Cheese
1 7-oz can Tuna, drained
1 cup Miracle Whip
1/2 cup Onion, minced
3/4 cup Sweet Salad Pickles
3/4 tsp. Salt
1/4 tsp Pepper

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

I like the Julienne Salad. Ham, turkey, lettuce (of course) boiled egg, american cheese, swiss cheese, bell peppers, tomatoes, onion and a slice or two of bacon on the top.

Peel, seed and slice a cuke, cut up a tomato and add Miracle Whip to it. You may want to add some sugar. Let it rest for about an hour so the juices mix together. YUUUMMM

fry some chopped bacon when finish leave grease on bacon to this add a little vinegar,sugar so its not to strong with vinegar add salt and pepper and 1/2 cup chopped onions(i perfer shallots but onions will do..use white or purple....let this mixture stand in your pan you fried bacon in....now get mixed salad greens not iceberg....place in bowl when ready to serve heat the mixture back up to almost boils add to salad greens and toss lightly...bob's wilted lettuce......you get the wilted effect from the hot mixture...

Greek salad
-crumbled feta cheese
-lettuce of your choice
-sliced cherry tomatoes
-sliced cucumbers
-italian dressing

Pasta salad
-cooked drained pasta (i don't know the name of it..those squiggly curly ones)
-then add italian dressing

...if you like..you can add what ever you want to your pasta salad..tomatoes, a sprinkle of parmasean cheese..etc

I totally enjoy fresh tomato, fresh mozzarella and garlic, drizzle with olive oil and sprinkle with fresh basil.
