I want to bake cakes for those who are allergic to eggs

Welfare Cake

"This cake is so moist that you would swear it was from a box!"

INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

You can in some cases substitute Egg Beaters (an egg substitute) that doesn't actually contain eggs.

Or, I have heard that applesauce is a good alternative and much lower in fat apparently.

The egg usually acts as a binder so it's important in the recipe. Also, I would Google something like egg-free cake or the equivalent, I bet you get several hints that way.

Replace the egg with Eggbeters!

1/4 Cup Eggbeaters = Large Egg

Chocolate Cake
Yield: 16 servings

3/4 Cup Margarine, at room temperature
1/2 Cup Eggbeaters, at room temperature
3 Tbsp + 2 Tsp Sugar Substitue (recommended: Splenda)
2 Tsp Vanilla
2 Cup Cake flour
2 Tsp Baking powder
1/4 Cup Instant dry milk;
1/3 Cup Cocoa
1 Cup Water, at room temperature
3 Seconds Nonstick Cooking Spray

Preheat the oven to 350ºF

Cream together margarine and sugar at medium speed until light and fluffy. Add egg substitue, and vanilla to creamed mixture and beat at medium speed for 1/2 minute.

Stir together flour, baking powder, dry milk, and cocoa to blend. Add 1 cup water to creamed mixture along with flour mixture and mix at medium speed only until smooth. Spread evenly in a 9 inch square pan that has been coated with nonstick cooking spray.

Bake for 30-35 minutes or until a cake tester comes out clean and the cake pulls away from the sides of the pan. Cool to room temperature and cut 4x4 to yield 16 equal servings.

you can eliminate eggs from the recipe. the main purpose of eggs in cake making is it`s used as a raising agent.so all u have to do is whisk the cake mixture a little more than u would so as to incorporate more air into the mixture. don`t over mix it though as this will cause ur cake to bubble . go ahead and try it i`ve done so when my recipe required eggs and i didn`t have any. gues what if u use the corect proportions and follow each guideline it will come out as goiod as if u had added the eggs . all the best and hope ur peeps enjoy their eggless cake.

I know this sounds weird....but try a can of diet soda (no joke). You can do Coke of Dr. Pepper for chocolate cakes or fresca or sprite for white cakes (I've done this with funfetti, too). You can also add a can of pumpkin to spice cake mix.

When you do this, just use cake mix and the soda or pumpkin....don't add any of the other wet ingredients like water, oil or eggs.

Like I said....I know it sounds bizzarre, but I made a funfetti cake with a can of diet sprite and my husband loved it and didn't know they was anything different about this cake than a regular funfetti cake. Making cakes this way also makes them lower in sugar and fat.

The substance will be more like a cookie, or a brownie, but just take any cake mix, and just dont add the eggs it calls for! Its that easy!! Alls eggs are for is rising the cake, and making it "Fluffy" anyway.......So, there you have it !!! Smile!!!

Try unsweetned apple sauce. Sweetened would work, too, I guess. However, I only buy the unsweetned as the sweented has corn syrup and high fructose corn syrup in it. (I can't figure out why they would ruin apple sauce with the artificial sugars.) Bananas also work, but the cake might have a banana flavor to it. Just do a search for "vegan egg substitutes".

hey. im allergic to eggs and i bake allll the time. use egg replacement. or if its more of a fruity kinda of cake. i prefer using this compared to my other option i like using apple sauce... it gives it kind of a tartness sometimes if you use the wrong kind. use pure apple sauce. and just put in about how much you think you'll need to use for the recipie.

You can bake a crazy cake. It takes salad dressing/mayonaise but no eggs. Just go to http://www.allrecipes.com and look up the recipe.
