Yes, anything with sugar in it is ripe for bacterial growth. This goes for pastries, cakes, frostings, etc.

No. If your kitchen is not too hot and humid most baked goods will be fine just covered for a couple days without refrigeration. However, whether you refrigerate or not, apple crisp will get soggy so, since it's a simple dish to make, cut your recipe next time and make it fresh again later.

once in out of the oven and cooled down ....send it to the fridge.
