I have about 20 bulbs of garlic I used as a centerpiece for a dinner party this week, and I don't want to waste it, any ideas how to use it all before it goes bad?

You can peel them and store them in a good oil - Like olive oil. Put them in nice bottles, give them for gifts or use for decorations in your kitchen.

Since you have 20 bulbs of garlic, I suggest that you use them
to cook up a good meal of pork ribs for ten people Chinese
style. Here's the recipe for the braised pork ribs with garlic:-

1. Pork ribs - 3 kilos, wash and cut into cubes (medium size);
2. Garlic - 20 bulbs, rinse, slightly smash with skin/stem intact;
3. To marinate the pork ribs, with black soya sauce (thick type)
until it is covered evenly, then add salt (2 teaspoon), ground
pepper (1/2 teaspoon) and fine sugar (1 teaspoon);

Heat up a pot with 4 tablespoons of cooking oil with medium
flame. Then put all the marinated pork ribs into the pot to stir
fry it. Add all the garlic (20 bulbs) into the pot and enough water
and cover the pot to simmer it over low flame for about 45
minutes.
When it is cooked, the pork ribs looks juicy, tender and
brownish. Good appetite!

Alternatively, if you're reluctant to cook for the above recipe,
you can do the simple way by preparing garlic oil (for veg.
and soup dishes)
1. Rinse, peel the skin and chop the garlic finely (20 bulbs)
2. Heat up the chinese wok or normal frying pan with enough
oil to cover all the chopped garlic.
3. Stir fry the garlic until it is golden brown with medium flame
4. When done, leave it to cool and pour it into a large glass
container with sealed lid for further use.

Make some garlic soup or maybe some Spagetti sauce.

For the garlic soup, I'd chop whatever garlic you can stand to cut in small pieces (onions too if you desired), fry it and place a pot with water to boil, wait for a while until its bubbling and put in some chicken broth.

You can also ad some rice, chicken or what have you. It's tasty and good for you. Try it some time.

you should make garlic bread:
1/2 cup butter, melted
4 garlic cloves, minced
1 loaf French bread, halved lengthwise

* < 30 mins Breads

1. In small bowl, combine butter and garlic.
2. Brush on cut sides of bread.
3. Place on baking sheet.
4. Bake at 375* for 8 minutes.
5. Broil for 2 minutes to brown.
6. Cut into thick slices.

Depending on whether you have 20 heads or cloves (if it's cloves you may need to buy more), but you could make my 40 clove garlic chicken (go here for recipie: http://bakespace.com/index.php?mode=listing&act=show&lst_id=1742)

I know 40 cloves sounds like a lot of garlic, but because it is unpeeled and roasted, it has a pretty mild flavor. This is one of my husband's favorite dishes.

Fresh garlic can be frozen in several forms:

You can freeze whole, unpeeled heads and remove cloves as you need them.
You can wrap chopped or crushed garlic tightly in plastic wrap and freeze, then grate or break off what you need.
Or you can peel whole cloves of garlic and purée them in a blender or mini food processor, using 2 parts oil to 1 part garlic, and freeze.
Finally, fresh peeled garlic cloves can be covered with oil and stored in the freezer.

chicken steak!

-garlic
-lemon juice
-lemon rind
-ginger
-dash of fish sauce (or salt)
-honey

marinade the chicken overnight (or half an hour if you don't have time) and cook in a saucepan with marinade and all. if you use enough honey it might form into a beautiful caramel. serve with rice or rosemary potatoes and a side salad.

if you have that much garlic, you may also want to conserve it by making garlic paste. just fling it into your food processor and add a bit of salt and lemon juice, then store it in an airtight container in the fridge.

grow some
keep some in case any1 gets sick
but dont eat 2 much cos garlic can mess up the brainwaves!!!

Freeze them or hang them to dry; I LOVE roasted garlic: trim off top, drizzle with olive oil, wrap in foil and bake in oven. I usually roast at least a couple of them whenever I do a roast in the oven. They are great to squeeze into mashed potatoes, or just on warm french bread or baguette - YUM.

I have a suggestion for you.

<<>
-Peel the garlic cloves
-Put in pan with lots of olive oil
-Add a sprig of gresh herb like oregano (if you have)
-Put on slowest flame for 2 hours or so. See it should not boil but very slowly bubble from one end. Finally it should be soft but retain shape
-enjoy with a variety of dishes like mashed potato, etc
