90 - 115 degrees works great when i make bread,and parker rolls.but if you want a chewy crust,like in french bread then you would need to have it set 75-80 degrees same with cinnamon rolls,to make your bread light and fuffly use potato flour in your bread mix,and the flavor it awesome.

I try to maintain from 110 to 115 degrees. But anywhere between 100 and 115 will works best for me. Also to proof your yeast, be sure to add 1 tsp of sugar per package of yeast to the water and wait for the mixture to double in volume before you use it.

probaby pretty low.. maybe somewhere around 150 degrees..
