Currently, the decorating trend is going toward slightly darker cabinets in maple and cherry. As far as appliances, the trend is moving away from stainless (too cold and industrial looking), and "hiding" the appliances (particularly the frig) behind cabinetry. Ultimately, it depends on how the rest of your house is decorated and designed, how you use your kitchen, and how long you're planning on being in the house. If you're planning on moving soon, stainless steel appliances and granite will help add value to your kitchen. If you're going to be in the house for another 10 years, then you need to decide what's best for you.
