You didnt specify Fresh Coriander vs. Ground Coriander seeds, so Im not sure if we're on the right track.

BANANA BREAD WITH CORIANDER

1 stick butter
1 c. sugar
3 eggs
3 ripe bananas
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 c. walnuts
1/4 c. coriander seeds
1/4 tsp. vanilla
1 tsp. cinnamon

Cream butter and sugar. Add eggs, one at a time, and beat until fluffy. Add bananas. Add flour, baking soda and baking powder. Combine both mixtures. Add walnuts, coriander, vanilla and cinnamon. Bake in a loaf pan at 350 degrees for 1 hour. Cool in pan for 30 minutes. Cool completely before cutting.

I have all of my indian or mediterranian cookbooks at home, but even african countries cook with coriander. Try checking the BBC cooking sections, as well as the food network and just put in the spice name coriander....no doubt they will have a bunch of listings for you!

Ceviche and Seco (spelling on that one) are both good -- from Ecuador (my MIL is from there...) Here is a Ceviche recipe (we use Shrimp!) Look up Ecuadorian cooking -- they use Cilantro/Coriander a lot.

1 pound cod, (or any lean white fish) diced in 1/2-inch cubes
2/3 cup fresh lemon juice, divided use
2/3 cup fresh lime juice, divided use
1 teaspoon salt, divided use
1/2 teaspoon dried oregano
.
1 tablespoon olive oil
1/4 teaspoon white pepper
1/4 teaspoon ground cumin
1 medium tomato finely diced
1/2 medium sweet onion finely diced
1 teaspoon vinegar
1 cup cooked frozen tiny salad shrimp, thawed
1 fresh jalapeno pepper, seeded, deveined, and finely minced (wear gloves)
1 tablespoon finely chopped fresh cilantro
PREPARATION:
Combine fish, 1/3 cup lemon juice, 1/3 cup lime juice, salt, and oregano.


Marinate in refrigerator for 2 hours.

Drain juice completely.

Combine remaining 1/3 cup lemon juice, 1/3 cup lime juice, olive oil, white pepper, cumin, tomato, onion, vinegar, shrimp, jalapeno, and cilantro. Stir well. Pour into a large zip-top bag, squeeze out all the air and seal. Refrigerate 8 hours or overnight.

Serve ceviche cold on a lettuce leaf with crispy tortilla chips or on a bed of mixed lettuce greens as a salad.

Note: The acid in the citrus juice actually "cooks" the fish so no heat is necessary.

Yield: About 4 cups or 8 appetizer/salad servings
