I do crepe suzettes but these are just as nice (if not better--i prefer crepes to american pancakes)

-1 package vanilla Jell-O pudding
-1 teaspoon rum
-milk
just follow the instructions on the package

-one apple (granny smith is preferred), peel, dice, and bathe in lemon juice
-1/4 cup raisins
-1/2 teaspoon cinnamon
-dash of nutmeg
-dash of clove
-1 tablespoon brown sugar
-butter
melt butter in saucepan, stir fry the apple and spices until nice and tender.

-half cup of flour
-1/2 teaspoon baking powder
-dash of salt
-1 teaspoon vanilla sugar
mix these 4 ingredients well in a big bowl, shape into a ring and leave a hole in the middle
-1 egg
break in the middle of that flour ring, and stir away untill you get all the flour
-milk
add tablespoon per tablespoon until you get a smooth, thin batter
-butter
heat butter in a frying pan, pour batter and spread thinly and evenly on the pan, wait till the edges turn golden brown then turn

serve crepe with one and a half tablespoons of baked apple and roll. top with vanilla pudding.

this is a recipe for apple pudding cake. i could not find
ANYTHING for pancakes with pudding. hope this helps, maybe you can modify the recipe somehow.
