Before you rush out and buy your folks a digital camera, you should consider how pc literate they are. If they aren't the PC type then a digital camera might not be a good choice. Also, is their PC up to the job or will they need to spend more money on their PC to get results?
There are still a lot of great 35mm point and shooters out there at good prices. A low end 35mm SLR might also be a good choice.
If digital it must be, I'd stick to Kodak - the tried and true. Kodak's EasyShare software is very easy to use and most folks would have no problems using it. The cameras are straight forward and provide great images.

In addition to the above recommendations, I suggest you visit the archaeological site of Akrotiri (if it is open), where you can actually see the left overs of a city after the volcano erupted. (A propos volcano, it is mostly a waste of time, money and sweat to visit it, there is no crater to see, just a small pitch black island. Maybe it's only worth it so as to see Fira and Oia from the sea, if you don't arrive there by ferry). It could also be interesting, if you rode up the hill separating Kamari beach and Perissa beach, you can have a view and visit the archaeological site up there. A view of almost the whole island you can have from the "mountain" where all the antennas are, Profitis Ilias. Oia is indeed very beautiful - but too crowded at sunsets for my taste. Fira has anyway spectacular views. The disadvantages of the island are, as already said, the beaches (deep dark waters - but Perivolos is a fairly good option), too many buildings everywhere, the expensive prices and the not so good service, but I hope you'll survive it, the natural beauty of the island is exceptional.

I'd recomment two comanies (the model will be up to you):
1) Kodak: very very very easy to use. Almost dummy proof. However, I think their software is so easy that it's almost annoying... If you try to do very simple stuff that is not part of their software, you may get frustrated...
2) Canon: always a sure bet! Excellent image quality. The cameras have a bit more knobs than Kodak, but if you want to have a camera that will allow you to explore more features, Canons are excellent.

Canon Ixus 60 or one of the other Ixus series, pretty basic to use, looks gorgeous, which is probably something they will appreciate seeing as they presumably don't care that much about the features, and technically it is meant to be good (the photos it takes seem pretty nice to me).
