Making Cheddar cheese is a completely different process than stilton.
To make Stilton, the milk is put in huge Vats with starter cultures. rennet and blue cheese mould and then stirred. The curd and whey separate and then the whey is mixed with salt before being poured into cylindrical moulds. They are then turned regularly. After 6 weeks the cheese is pierced with stainless steel needles to let the air in to kick start the blue mould which creates the veins. It is then left to mature until ready.
I find you can still eat Cheddar tho if it is mouldy just cut it off. it's usually all right in the middle but would not recommend eating the mould, it will make you ill!!

Not an early form of Stilton. Stilton is made by an injection process. You can eat cheese even when the mould appears. Just slice the mould off. If you have guests best do that in private.

The mould may not look nice but it is perfectly safe. The two answerers about Stilton are wrong, the mould is neither injected or put in. It is a perfectly natural process of development. Some people think copper wire is used to create the veins. This is also a myth.

Mouldy cheddar cheese is edible, but it is nothing like Stilton where they put the blue veins into the cheese.

Just cut off the mold, and the cheese will be fine. No it`s not stilton, that is completely different. more creamy, and the mold radiates throughout the cheese, not just on the outside. completely different flavor, and texture , too.

think you would have other things to worry about if you ate moldy chz,like the bathroom runs and possible stomach virus. To be on the safe side throw it away and buy more.
