Double Stuffed Potatoes with The Works

2 large Russet potatoes, cleaned and pricked with a fork several times each
Drizzle olive oil or vegetable oil
2 slices center cut bacon, chopped into 1/2-inch pieces
2 scallions, chopped
1/4 cup sour cream
1 cup shredded cheddar cheese
Salt and coarse black pepper

Preheat a small nonstick pan over medium high heat. Rub potatoes with a drizzle of oil. Place potatoes on a microwave safe plate and microwave on high for 12 minutes, rotating once. While potatoes cook, add chopped bacon to hot skillet and brown until bits are crisp. Add scallions and cook scallions together with bacon 1 minute more. Transfer bacon bits and green onions to a paper towel lined plate to drain. Allow potatoes to cool enough to be handled, 5 minutes. Preheat broiler to high. Cut potatoes in half and scoop out the flesh into a small bowl. Smash potato flesh together with sour cream until combined using a potato masher. Stir in cheddar cheese, bacon and scallions and season with salt and pepper, to your taste. Scoop filling back into potato skins and place on a cookie sheet. Place potatoes in oven and brown under broiler, 6 inches from heat 5 minutes.

You can do anything - the tuna idea, broccoli or other veggies with cheese sauce, or perhaps try chili or hash. What about twice baked? Do you know what Hassleback Potatoes are? Yum! Here is the recipe:

Serves 8

8 long baking potatoes
1/4 cup Parmesan cheese, grated
1/2 cup bread crumbs
1 tablespoon olive oil
1 teaspoon paprika
Kosher salt, to taste
2 tablespoons olive oil, for top of potatoes
2 teaspoons fresh parsley, minced

Preheat oven to 450° degrees F. Oil a large shallow glass baking dish.

Peel the potatoes, place on a cutting board and cut a narrow slice from the bottom of each potato; discard the slice; the potato will lay flat and not roll. Place two long handled wooden spoons or wooden chopsticks on each side of the potato lengthwise. Use a sharp knife and slice each potato crosswise, making 1/8-inch apart slices cutting down vertically. The wooden spoons or chopsticks will prevent the knife from cutting entirely through the potato.

Place the cheese, bread crumbs, 1 tablespoon oil, paprika and salt in a food processor; process until blended. Brush potatoes with the 2 tablespoons oil and pat the bread crumb mixture on top of each potato. Place in the oiled baking dish; cover with foil and bake 30 minutes. Remove the foil and bake an additional 15 minutes. Remove from the oven, sprinkle parsley on the tops and serve.

cheese and oinion grate some cheese and chop a little oinion then scoop out the middle of the potato mash the potao with a little butter then mix in the cheese and oinion then put it back into the skin put grated cheese on top then put it into the oven or under the grill till the top of it has gone a golden colour

What about taco potatoes.

Bake the potato, open up potato and top with cooked taco seasoned ground beef, cheese, lettuce, and tomato and sour cream. Perhaps guacamole?
