5 ea Ripe bananas
3 tb Fresh lime juice
2/3 c Fresh orange juice or water
1 1/2 c Sugar
1/2 Vanilla bean split in half
Lengthwise and cut into 1/3s
1/8 ts Salt
1 tb Banana liqueur (optional)
Peel the bananas and thinly slice or mash with a fork. Place the bananas
in a heavy saucepan with the lime juice, orange juice, sugar, vanilla bean
and salt, and bring to a boil. Reduce the heat and gently simmer the
banana jam until htick, about 30 minutes, stirring often. Stir in the
banana liqueur and remove the pan from the heat. Leave the vanilla bean
in the jam - it's pretty.
Spoon the jam into three 6-ounce canning jars that have been sterilized.
Fill the jars to with-in one-eighth inch of the top. Screw on the lids.
Invert the jars for 5 minutes, then reinvert. Let the jam cool to room
temperature.
Store the jam in a cool, dark place. Refrigerate the jam once opened; it
will keep for several weeks.

In order to get jam to set, you need a compound known as pectin, which is naturally available in most fruits although some fruits have more of it than others - therefore, if you look at recipes for jams made with other fruit you'll usually find that they recommend that you mix in some pectin-rich fruit or you add some artificial pectin. Bananas don't have any pectin at all, so that's one reason. Another is that when you cook fruit for jam you want it to retain its shape - so you've actually got bits of real blackberry or strawberry or whatever - and if you start to cook bananas you get a horrible mush.
Bananas do, however, make great chutney. So try that if you have a glut.

The answer of course is that you do get banana jam.
Here's a recipe (It falls into the 'Spreads' catagory):
Ingredients:
2 c Mashed banana
2 tb Lemon juice
Blend ingredients together until smooth. Heat to a boil in a saucepan; turn to low and simmer, stirring occasionally, until mixture thickens. Yields 1/3 cup.

bananas arent technically a fruit, theyre a herb. the banana tree is a 'perennial herb'. but im sure you can make jam out of them all the same.
