when do you measure the time? From when the water starts to boil or from the time it is already boiling?

Two minutes for soft and runny to three minutes for stiffer egg and still liquid. Measure from the time the water starts to boil.

3 minutes from the time it's a rolling boil. That's why it's called a 3 minute egg. Then you crack the top off and can even eat it out of the shell. That's what my hubby likes to do. There's an art to that, tho. That's why I take mine outta the shell.

If you are at all worried about salmonella, you shouldn't be eating soft boiled at all. But I always make mine semi-solid at 6 minutes. That way I can pretend I'm having a soft boiled egg, and yet give a nod to avoiding salmonella poisoning.

(I guess I'm more conscious about this then a lot of people because my oldest daughter almost died from salmonella poisoning received from the food in her baby food jar at 8 months.)
